Creamy Lemonade Pie - A Delicious Treat for the Summer that Everyone Will Love- No Baking Needed!

- Creamy Lemonade Pie
5 ounce can Carnation Evaporated Milk
3.4 ounce box instant lemon pudding
16 ounces cream cheese, softened
3/4 cup Country Time Lemonade powder
1 graham cracker crust (9 inches)
For the Lemon Whipped Cream:
1 cup heavy whipping cream
2 Tablespoons powdered sugar
2 Tablespoons instant lemon pudding
1/2 teaspoon lemon extract
1 teaspoon lemon zest
To make the pie:
In a small bowl, combine the milk and the pudding mix. Beat on low for two minutes. This mixture will be thick.
In a separate bowl, beat the cream cheese until it is fluffy. This will take about three minutes.
Gradually beat the lemonade powder into the cream cheese. Allow this to beat for one to two minutes so that the lemonade powder will dissolve. 
Slowly beat the pudding mixture into the cream cheese mixture. Pour into the crust. Cover and refrigerate for at least four hours. The pie may be eaten after it has chilled or you may make the lemon whipped cream and add to the top.
To make the whipped cream, add the heavy whipping cream, powdered sugar, and pudding mix to a mixer cold bowl and whip until stiff peaks form. Add in the lemon extract and lemon zest. Pipe swirls of the whipped cream on the top of the pie.
Keep refrigerated until ready to serve.

The best whipped cream stabilizer is called “Whip It” which is tasteless and will keep your whipped cream from weeping and getting runny, it is available on Amazon. I am 77 and German born, we use this stuff in all of our pastries that call for whipped cream, it has no nasty preservatives or food coloring in it, is tasteless and will hold your whipped cream in the fridge for a week at least and out of the fridge for hours on in, it is the best! You could always add some lemon zest and a drop of lemon oil in your whipping cream, along with a little powdered sugar to sweeten it and the “Whip It” which will give you a wonderful lemon whipping cream!

I think Cream of Tartar does the same thing. Of course you don’t get the same flavor as you would if you added the pudding.

I am also of German descent, and I'm 80. However I don't think I've ever seen that product before. I have now found it on Amazon and will give it a try.

Your whipped cream won’t have a strange taste to it, will taste just like whipped cream should, it is great for making my German Black Forest Cake and my Windbeutel aka Cream Puffs. I put my whipping cream in the bowl (add 1 pouch of “Whip It” per 1 cup of whipping cream) and I add a little powdered sugar to it because I do not like very sweet whipped cream and whip it up until you have nice stiff peaks.

Trick to cutting pie and having the first slice come out nice: cut a slice like normal but instead of trying to remove it, go and slice a second, THEN remove the first one. I saw this on a cooking show. It relieves the tension and allows the first slice to come out easier. ❤

I, too have been using whip it to stabilise my whip cream for years. My English friend turned me on to the whip it years ago when we were young brides and new neighbours.
I noticed this video because my family used to do lemon or strawberry chiffon pies by Jell-O instant mix. This might be even better! They don't make that anymore.
An alternative crust that I almost always use for every pie is a cookie crust. Carolyn's cookie crust. I think it's 1 + 1/2 C flour, 2 T sugar and 1/2 stick butter. Plus, I always put in broken pecans, if I have them. Press into pie dish. ..bake @350° for 8 minutes, or so...just lightly browned. My husband didn't like graham crusts so we liked this one.

And here I am with 2 quarts of fresh squeezed lemon juice in my fridge from our lemon tree and no lemons were harmed in the making of this pie.
Good gracious this has me salivating all over my keyboard! BTW a bit of cream of tartar will stabilize whipped cream.
But it won't give the lemon taste that the pudding gives.
@@bowed305 I didn't say it did. I was referring to Tom's explanation as to why the pudding works in this situation.
You're right about the cream of tartar, but in my opinion, the pudding mix does a much better job of stabilizing the whipped cream and holds it much, much longer than cream of tartar.

Lemonade Pie, oh my! I made this for our year end community group dinner at church tonight and it was a hit! I made two pies just in case and thank goodness I did. I’m so happy that I get to use the rest of this large container of country time lemonade. By the time I made it for just me, which it’s just me in my home, I was tired of lemonade. I sure didn’t want to waste it. I’ll be making this pie bc I love anything lemon! This pie sounds delicious! I'm really enjoying this lemon series. Tom & Melissa, you are both so sweet & genuinely good, kind teachers, explaining so well. I've learned so much from you. I have a suggestion. My granddaughter love strawberry lemonade. So this summer I've been making my favorite lemon recipes but I've been sprinkling crushed freeze dried strawberries on top. The lemon cookies worked really well with the dried strawberries sprinkled on top after they came out of the oven. You might try using freeze dried strawberries in some of your recipes. They are a fun burst of strawberry flavor. Love you both so much!

I copy/paste all of your recipes then print them off. I have a good selection of all of your amazing recipes. This pie sounds amazing. Lemon in the summer is so refreshing and after a heavy meal, it is really good. I am going to have to make this. If I make a cake I get so tired of it and freeze the rest but they are just not as good when made fresh. I am single so a pie is perfect for me. I wish I did not like desserts but my mother always had home made desserts and I got so used to them and learned to bake from her. I used to help her make cakes. She NEVER used cake mix. I NEVER use cake mix. I know they are
alot different now than they used to be but it is what you get used to. My oldest sister always uses cake mix but not me. When my family gets together I am always asked to bring desserts instead of a side dish and that suits me just fine. I put alot of love in my desserts. This is a great pie, I am going to have to make this. I have already copy/pasted it and printed it off.

OMG! I love Lemon. I have watched almost all your videos on my sister's account that is connected to our tv. Tom and Melissa, Your video gave me an idea....I have 2 addictions, Lemon and chocolate. I would make this pie half Lemon and half chocolate. I would split the lemon pudding in half. So Lemon on the bottom, chocolate on top, Then use Tom's Lemon whipped cream topping. OMG! I have touch the pearly gates of heaven😋
