    This is a great soup and I recommend a dash of balsamic vinegar and some tarragon. Just try it! It will change the way you eat bean soup. :)

    if you soak your beans for 20-24 hrs, they will get mushy soft in 30-40 mins max of cooking. So no need for 2 hrs or so cooking

    I was looking for a way to use lamb shanks instead of pork shank, and white (or black) beans to make a soup called pasoujl from the former Yugoslavia. It has the same ingredients and cooking time and I like the idea of freezing it to skim off excess fat. Pasoujl requires additionally, onions, a lot of garlic, carrots and bell peppers and tomatoes, and smoked (or sweet) paprika. A lot of chefs make a roux with the paprika to thicken the soup like a gumbo, but I take the shank out and use a hand held blender just to thicken it naturally. Slice or shred meat back into the bowl. Priatno! (probably spelt it wrong it was my Dad's recipe. He liked it spicy and added a whole chili but everyone has their own version.) You can do it in a slow cooker over the course of a day, or in an electric pressure cooker in about 40 minutes, minus depressurizing time.

    Love pork shank so much. I buy them often to try in recipes such as this when they show up in my feed (14 years later🤫). In any case pork shank cured & smoked correctly is very fine eating and I end up eating the shank before I can make the recipe, lololol. Maybe I’ll get lucky with this recipe, it does look super delicious and I’ve been wanting to make some beans too.

    i've made variations of this before I saw this video. Sometimes I add Italian Sausage and most recently I added 2 chicken thighs. Not together of course. I carmelize the onions separately then add them towards the end.

    To make it more rustic you can break up some of the beans with a stick blender. A drizzle of Olive Oil in each serving bowl and some crunchy rustic bread, YUMMY!

    in sweden there is a similiar thing called "ärtsoppa" which pretty much is peas and pork boiled together for a long time. so good.

    I used pressure cooker to cook meat and then added canned navy white beans. Very nice.

      There are very good reasons why many foods are slowly simmered instead of say, boiling the hell out of them. Most people prefer the taste of a slowly braised or simmered stews, chicken, meats, and many other dishes versus the boiling at high temp pressure cookers . They have their uses, but they're pretty limited.
