      Hello Sylvia! You are too kind. I try to do as much true from scratch cooking as I can (and show that it doesn't have to take all day). The quality and portion of food you get when you make your own can't compete with any fast food alternative. Happy Canning!

      The nice thing about canning is you can still follow the channels that show the dump in a crock pot meals but using home canned product. Canning opens up whole new world of meal prep 😉

    Ahhh!!! I love so many of these tips and tricks! Really streamlining (water bath, steam or pressure) canning makes for a happy, productive home. The up close comparisons were a great visual to see what we are actually putting in our bodies! Excited to try these recipes! I have to say I’m happy your channel is growing (been here since around 1k subs) but you are still SOOOO under viewed in my opinion! I tell most people your channel is in my top 5 to watch to learn about most homesteading things! Keep on keeping on! 🙌 ☺️

      Christine! You are too kind, truly. YT has been a joy because I finally have canning friends to connect with! I try to post as often as I can between work and family life and try not to get down on myself when I fall behind with editing. Having an assembly line and pepping your kitchen really makes this process a breeze. I wanted to include the visual comparison because it truly does make you see how skimpy most brands are! It’s enough to make you upset, lol. I so appreciate your kind words, friend!

    I’ve done the Chicken Chili Verde and it’s excellent. Another use for the Chicken and Gravy Dinner is to add some carrots, thicken the broth and use it for chicken pot pie filling.

    I just discovered you 20 minutes ago! I purchased a 16-quart pressure canner a few days ago. My freezer is getting full with mason jars. I have been concerned about the electrical grid going down, so pressure canning it will be. As a single senior living in a city, I mostly use wide-mouth pint or half-pint jars. I don’t have a vegetable garden yet, but visit my local farmer’s markets and organic food stores for now. Subscribed!

    Just recently found your channel. Went to the store and found very marked down mushrooms. I'll be loading my dehydrator tonight, then start my first fermentation tomorrow. thank you for energizing me, have a quarter side of beef coming in February. I've canned home raised rabbit before; next spring will be beef and my fruit trees. If you can butcher chickens, I'll find a neighbor to teach me.

    I tried freezer meals years ago and it was a huge failure. I found I wasted precious freezer space for meals that got shuffled to the bottom of our chest freezer and forgotten about. My friends & family appreciate and love a basket of these jars as a part of a get well care package.

    My family didn't like the freezer meals. Well they were plight and suffered through them, typically, they ended up eating some carb load later because they were hungry and the leftovers languished in the fridge. So either I ate them or they got composted. Or everybody figured out how to go to a friend's house the night that I serve that freezer meal the next time. Donated those to the friend that I did them with and went back to canning.

      Try more salt and herbs. Lavender increases estrogen and Rosemary decreases and lowers estrogen.

    I have a suggestion for you. You have me tinned several times that you would like to start freeze dryer but the equipment is super expensive. You are definitely right! I've checked into it too, but I'm on Disability and low income, so not for me any time soon!
    Have you thought about contacting one of the companies that make the equip and see if they will sponsor you? They might provide the equipment in exchange for showing and using it in your videos. It is worth a try. The worst case is they say no.
    I wish I could be there with you in your kitchen to learn and watch. I envy your energy and persistence!

And, your recommendation is worth a shot but I’ve got to wrap my head around the sponsorship thing-part of me feels like it wouldn’t be relatable or accessible to how most folks could obtain a freeze drier and I’m fine to wait a few more years.     Now my canner never leaves my stove. Its normally the meats that take so much time in meal prep (and clean up) I have a ton of canned meats I got on good sales at the ready. I also put a large batch of bone-in chicken thighs in the slow cooker as soon as I get back from the store. Then its frozen in the right portions. I also can a lot of jars completely unseasoned so I can feed it to my cats. Canned cat food is nasty stuff and the better brands are so expensive. Home canned ranch beans (recipe @ Whippoorwill Holler)are also a staple in this house. Thanks for sharing your creativity. 💕

    Hello I'm a new family member I'm so glad I found YOU I love the way you explain your preparations I've never pressure canned SCARED TO DEATH OF THEM LOL MY mom pressured canned and 1 time the lid blew off and food was on the ceiling terrified me from that point on I was only 13 I'm 62 now mom still pressure cans you make it look AMAZING I MAY GIVE IT A TRY Pull my big girl panties up and try to get past my fear.       Hi Joyce! Awww honey, your words are too kind :). I've not experienced a lid blowing off, which I can imagine left the wrong impression, but there are so many new features (along with updated canning directions that are clear) which make pressure canner a breeze. I don't know where I'd be without it. Things get buried and freezer burnt in the freezer so I'm so glad to have canning as a food prep alternative. Honey, you are 62 years YOUNG and still have plenty of time to start canning! Sending the love right back at ya!

    I hope this question isn't too silly, but are the white peas from a can? Or are they pre-soaked from dry? Or are they just dry but rinsed? Sorry if this sounds dumb, but I wasn't sure! I love having pre-cooked meat on my shelf, but I may start to branch out into canning more meals. It's a wonderful time saver, and your right, the quality is much better than store-bought!

    My husband from Mississippi and did cabbage added water heated up in big pan till hot inside jar the put on lid removed from and then seals is that good enough for dinners in a jar

    I like to bloom my spices in oil when I cook to get all their aroma. Could I bloom in oil and then drizzle that in, instead of the raw spices?

    I wish a video was done on fermenting and why things go wrong. I’ve tried twice with no success. My next try will be distilled water. But would love to know why I get slimy looking carrots, and muddy turn to slime cabbage (kraut). I even bought fermenting tubes that stick in the top of a mason lid after the carrots got slimy, mold grew. But I will try again. One of my thoughts is kitchen to hot. I plan on trying in fall next. Love your videos. I will have to do some soups. I’m more an ingredient canner. But love soup.

      Did you check periodically to make sure the veggies were completely submerged in the brine? Maybe you need to add more salt, since there was mushiness and mold. A cooler spot would probably help too, if you have a basement or at least away from the hot appliances. The basic brine recipe I got from the School of Traditional Skills is 4 Tbsp salt to ½ gallon cold filtered water

      @@chRizma thank you for your input. Yes veg was weighted below brine, don’t recall salt amounts at this point. Due to my mother in law 83 living with us, temperature has been a battle. We keep AC on 74, any cooking, dehydrating canning, my kitchen gets hot quick. I plan on trying again in fall when temperatures cool down, will utilize my basement then. Also can put by sliding glass door then too. I have cabbage planted for a fall harvest. Then will try again. Will take note on your salt you listed as well. Thank you.

    I just started my second time fermenting. I’m trying a corn relish. I’m not sure if it’s an approved recipe. I’m wondering if I’m overthinking this though. Still nervous about fermenting. Opened the jar today to skim off some floating food and now I’m worried that I messed it up lol it’s all so new yet.

      Hello Chica Boom. Your canned jars will be at best quality for the next 14-18 months, but I've had jars closer to 2 years still taste delish! As long as the seal remains tight, its safe to eat!

      Hello Marigene! I share other sources so that folks know these aren't recipes I've made up completely on my own. Ball has not been the source of the most egregiously unsafe recipes (for example, recommending to water bath meat) so its more of an FYI. Always do what's best for you and your family.

      Hello friend! That is perfectly fine (and I was where you were just a few years ago). The process is easier than you think and you can learn TONS here on TH-cam and with a good canning cookbook! Canning is a science, perfectly safe and really gives you new meal prep options. You've got this!
