Coerce leads to do many fun moments. Racking up a list is enemies using coercion is one of my favorite ways to play a 'evil' character and really get the point across (without having to turn your character into a murder hobo)
You say you can't do this to undead but mindless would be a better description. You could coerce an intelligent undead like a vampire. But I think most understand that
