- Here's a recipe for "Sinabawang Malunggay with Sardines," combining the nutritious moringa leaves (malunggay) with flavorful sardines.
Ingredients:
- 1 can of sardines in tomato sauce
- 1 bunch of malunggay leaves (moringa), washed and separated from stems
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 4 cups water or fish broth
- 2 tablespoons fish sauce (patis)
- Salt and pepper to taste
- 1-2 pieces green chilies (optional, for added spice)
Instructions:
1. Prepare the Ingredients:
- Wash and separate the malunggay leaves from the stems.
- Open the can of sardines and set aside.

- In a pot, Boiling the water over medium heat.
- Add the onions.
- Add the tomatoes and malunggay.
- Reduce the heat to a simmer and cook for about 5 minutes to let the flavors meld.
4. Add Sardines
- Gently add the sardines along with the tomato sauce from the can. Stir carefully to avoid breaking up the sardines too much.
- Let the soup simmer for another 5 minutes.
5. *Season the Soup:*
- Add the fish sauce and season with salt and pepper to taste.
- If you like a bit of heat, add the green chilies at this point. just until the leaves are wilted but still vibrant green.
6 .Serve
- Ladle the soup into bowls and serve hot with steamed rice.
