I know some don’t like pie made from a pumpkin because the taste is different from the canned pumpkin. That’s because most of the “pumpkin” in the cans are really made from different kinds of squash. So if you only have some other winter squash try them out in a pie too I like mixing them to find different flavors. Sweet dumpling squash has a kinda chestnut flavor. Hubbard and butternut are also good ones to try.

I have eaten pumpkin pie for breakfast for years & thought I was weird for it , guess not! I've used both pie pumpkins and decorative pumpkins , both worked. I also boil, then season & bake seeds. Pumpkin the gift that keeps on giving!
The pie looks scrumptious, but I think my favorite part was at the end when you asked us to invite someone to join us for Thanksgiving who might not otherwise have a place to go. So you warmed both my tummy and my heart! Thank you for being you. ~Michele
Pie's in the oven, right now. I halved the recipe cut back the sugar a bit and added 4 eggs instead of 6. I love how easy this is. I'm making the crustless version.

I done this and canned it. Or course I didn't add the milk and eggs until I was ready to use. I done this because I was worried the pumpkins would go bad before time to use. I don't have a cellar and great place to currently store produce. I am baking today for tomorrow so far everything is looking great.
Ok! I’ve made this two times now and I have to say WOW! I like to make (2) in a roll pan and freeze. So yummy and thank you for such a wonderful recipe. I think the custard texture is marvelous and Oh! My husband who dislikes pumpkin pie likes this one I’ve made pumpkin cheesecakes in the past my family including my husband loved but I used a pink banana gourd. I cannot find them for sale anymore. Guess I’ll have to grow them. I prefer them over the sugar pumpkin

I'm trying to find one with an open handle like yours that I can hang on the side of bowls. 2) Would you do a tutorial on how you care for your cast iron pans? I make a version of James Beard pumpkin pie which calls for a bit of calvados (apple brandy) and some spices including finely chopped candied ginger. The last few years the pie crust has been eliminated (gluten intolerant) the pumpkin mixture strained, then baked as a pumpkin custard in a water bath. So silky and so good.
Actually, I roasted my first whole pumpkin last night and I put it in stem and all, not even stabbing it before roasting it. It was a fairly small sugar pumpkin and took about 70 minutes to get soft. At that point, the stem came right out. Interestingly, the stem itself was barely warm.

@@ashleyschellinger6052 It is difficult for me to cut into our squash when raw. I have to have my husband cut our acorn squash for me. I just don't have the strength.
You can put your washed pumpkin in the microwave till the knife inserted comes out easily. No fighting with peel. Just scoop out the seeds . Either bake the seeds or feed them to the chickens.

Can you use your pumpkin seeds to plant after you have cooked it? I think not. So it is best to cut out the seeds first then cook, right?

I usually half mine, then glaze them with butter/maple syrup (depending on what i have on hand)
