John, I made this pie and the filling came out very silky and smooth! At first I was worried the filling didn’t bake long enough bc it was so silky. I love the method of warming the pie filling as I never have never done this before. But it really turned out great and it melts in your mouth! Thanks

I love all of your tips! But watching the way you shape the foil to protect the pie crust when baking was my favorite! I have always cut little strips of foil lengthwise and tried to piece them around the edge of the pie, and they always fall off! It never dawned on me to use a great big long piece of foil and shape it to fit around the pie. Amazing! I just baked the pie and the foil worked perfectly. This is a forever tip for me!

I have been baking pies for my family and friends for years. I learned how to bake pies by trial and error. I have always been able to produce tasty pie filling. I could NEVER make the best crust nor the prettiest crust. I could never manage to flute correctly or roll the dough properly. I have watched many videos on making pie crust with no good results. I don’t know if you already made pie, but it’s important to use sugar pumpkins and not jack o lantern. Sugar pumpkins are sweeter and produce better flavor!

And I just made this recipe again but I used store-bought pumpkin puree (Libby's) and it tasted amazing too, they both taste the same, so you can you any pumpkin :) I love to bake, and pumpkin pie is my favorite pie and the only pie I like, I'm 11 years old and I bake a lot!
Yet another great recipe! I screwed up the first pie pre-baking. Didn’t come out as crispy and pretty as it should. But I didn’t give up and did the second baking that made the bottom of the pie crispy. The filling came out smooth and yummy. I used my own roasted pumpkin which was a lot more watery. I used 2 oz more and cooked down to make it thicker. The final came out a bit ugly, but crispy crust and smooth and flavorful pumpkin. Soooo yummy. I will try again!!

Another banger, John! I'm an aspiring baker, going to a college baking program soon, and I love following your recipes to get in practice. I used your pie dough recipe and the blind baking technique and the crust was magnificent, even though it being my first time with pie crust, it turned out not that aesthetically pleasing. I don't have a deep dish pie pan, so I didn't put in enough filling and got a mostly crust-pie, but it still turned out delicious. I'll be remaking the pie soon once I get a deeper one, and I'm sooo excited to get it right this time!
Never knew about warming filling. I've been spraying my crust with Pam Spray with flour, pouring in the filling, than bake. The bottom crust always comes out toasty delicious. Works with apples too

I've been a chef for 25 yrs and this is a first with seeing your blind baking. You don't need to use foil parchment paper is fine because your oven is hot. But you need to prick the base to allow the steam to leave and it will stop the base from rising. Once your base is blind baked whip one egg white loosely then with a pastry brush coat the inside and base of the pie crust . Place in oven for 5 mins. The egg white will cause a barrier ensuring a perfect crisp base Use egg yolk only to egg wash your crus. Dont need to add milk water or cream to thin out the wash Just tap the the pie on the work top this will get rid of all the air pockets no need to add a hair dryer
Do you know why mine tasted like canned pumpkin almost? I was wondering if it was because it only calls for some brown sugar. Mine wasn't sweet at all and the inside of the pie didn't bake right no matter how long I tried to bake it for, it started to brown rhe crust too much before center 😥

Hey John, another great recipe! I wanted to ask. Durning the first "blind bake" for the crust, you had mentioned to preheat the oven to 450 & baked the crust for 10 minutes. Then you had turned the oven to 375 for the second "blind bake" for another 10 minutes. However; in the video text it says bake at 450 for 10 minutes for the 2nd blind bake. Does the oven temp matter for the second bake? Hope you & your family are all well. Thanks
I’ve herd that glass breaks when you expose it to extreme heat right after exposing it to extreme cold has a pie plate ever cracked on you when you bake it right after taking it out of the freezer?
I plan to make your perfect pumkin pie filling for Thanksgiving this weekend. Although the pie crust is beautifully flaky, I am going to pair the pumpkin filling with a pie crust made with a combination of butter and leaf lard. Can't wait to eat perfect pumpkin pie like it is perfecto pizza! (Thanksgiving in Canada is in October.)
Hey, John, I love your videos. I think I've seen them all. Anyway, I believe there might be an tiny problem with the "blind baking" of the pie shell. I see you're using a glass pie plate. If you freeze the pie crust, then put it into a scorching hot oven wouldn't that crack the glass? Unless, of course, a new high tech glass pie plate is being used. If so, please accept my apology for being stuck in 60s! LOL Take care and keep those videos coming!!
Great question! I needed the answer to this over the weekend when I made this recipe as well! I am a worrywort, so I ended up letting it sit out an extra 10-15 minutes for the glass to somewhat come to room temp before I put my pie in the oven.

Never knew about warming filling. I've been spraying my crust with Pam Spray with flour, pouring in the filling, than bake. The bottom crust always comes out toasty delicious. Works with apples too
John, thank you so much for the BEST BAKING TIP EVER!! Wow! Blind baking the crust before baking the pumpkin pie is brilliant! Yesterday, for Thanksgiving, that's exactly what I did. No gummy, yucky bottom crust! I never heard about blind baking the crust beforehand. I didn't take a picture of my pie because I didn't have all the necessary ingredients to make your recipe. I for SURE am doing your recipe for Christmas! Love your videos! I have learned so much from you. Again, thank you so very much! 🥧😊

I've been a chef for 25 yrs and this is a first with seeing your blind baking. You don't need to use foil parchment paper is fine because your oven is hot. But you need to prick the base to allow the steam to leave and it will stop the base from rising.
Once your base is blind baked whip one egg white loosely then with a pastry brush coat the inside and base of the pie crust . Place in oven for 5 mins. The egg white will cause a barrier ensuring a perfect crisp base
Use egg yolk only to egg wash your crus. Dont need to add milk water or cream to thin out the wash
Just tap the the pie on the work top this will get rid of all the air pockets no need to add a hair dryer
Do you know why mine tasted like canned pumpkin almost? I was wondering if it was because it only calls for some brown sugar. Mine wasn't sweet at all and the inside of the pie didn't bake right no matter how long I tried to bake it for, it started to brown rhe crust too much before center 😥

I think all the ingredients are easily available here in Kenya. Pumpkin puree you can make easily.
You could use a different kind of squash as well, depending on what's available there. I make it with butternut squash, not pumpkin.
The only bad thing about this pie is you just cant have enough. And it made my life harder by adding some extra workout.
But its worth it EVERY SINGLE PIECE 😋

Hey John, another great recipe! I wanted to ask. Durning the first "blind bake" for the crust, you had mentioned to preheat the oven to 450 & baked the crust for 10 minutes. Then you had turned the oven to 375 for the second "blind bake" for another 10 minutes. However; in the video text it says bake at 450 for 10 minutes for the 2nd blind bake. Does the oven temp matter for the second bake? Hope you & your family are all well. Thanks

Hey, John, I love your videos. I think I've seen them all. Anyway, I believe there might be an tiny problem with the "blind baking" of the pie shell. I see you're using a glass pie plate. If you freeze the pie crust, then put it into a scorching hot oven wouldn't that crack the glass? Unless, of course, a new high tech glass pie plate is being used. If so, please accept my apology for being stuck in 60s! LOL Take care and keep those videos coming!!
I've never had a problem with that but I also feel like metal pie dishes are the best.

Great question! I needed the answer to this over the weekend when I made this recipe as well! I am a worrywort, so I ended up letting it sit out an extra 10-15 minutes for the glass to somewhat come to room temp before I put my pie in the oven.
The only recipe I've ever used is on the back of the libby's can. I cannot wait to try this. I love this guy. He's amazing.
