Salata Aswat in 2 Ways || Sudanese Eggplant Salad 🥗

Two different ways of making Eggplant Salad
INGREDIENTS LIST:
SALAD 1 - Eggplant salad with onion, tomato and peanut butter
Canola oil (or oil of choice) for frying the eggplant
1 1/2 large eggplants (or 2 medium eggplants)
1 small onion
3 small tomatoes
2 tablespoons of peanut butter
2-3 tablespoons of lemon juice
1 tablespoon of olive oil
Salt to taste
Black pepper to taste
SALAD 2 - Eggplant salad with capsicum, tomatoes, and onions
Canola oil (or oil of choice) for frying
1 1/2 large eggplants (2 medium eggplants)
1 tomato
1/2 red onion
1/2 small red capsicum
1/2 small yellow capsicum
1/2 small green capsicum
Salt to taste
Black pepper taste
Dressing for second salad: White wine vinegar, lemon, extra virgin olive oil, salt & black pepper.
How to make the dressing: Put equal parts of the wet ingredients in a mason jar along with salt and black pepper to taste and shake well until it is all combined, then it's ready to use.
** For this recipe, use 1-2 table spoons of each wet ingredient then add salt and pepper to taste.
HOW MY FAMILY & I EAT THIS: Both salads can be eaten as a salad to accompany a main meal and the first salad (eggplant + peanut butter) can be used as a filling for sandwiches, bread rolls or wraps.

And the second type is amazing when you add yogurt or mayonnaise 🥰🥰, you can still mix with the peanut butter stew

I love salata Aswat, but my problem is the oil. Recently, I started baking the egg plant instead of dip frying the eggplant and I love it.
That’s interesting. I have never thought of baking eggplant before but so love trying out new recipes and will try thats out soon. Kindly share how you do it. Do you bake then mix with peanut butter? Thanks for sharing 🤗
@@asedoskitchen So I dab olive oil on the Eggplants and sprinkle small salt, put them on the baking trays until they become golden brown. Once they're finished baking, I continue with the normal process of cooking fried eggplants.
The oil one is my favourite but I also bake or boil the eggplants 🍆. I love this dish in all types 😋 😍

Salata aswat is always a fail for me, I think I won't go wrong with the second one.....
I encourage you to try since it’s through trial and error that we learn. I’ve had my fair share of fails until I got comfortable with it. Kindly share how you go ☺️
