  • Taste of South Sudan food channel presents Eggplant Salad with Peanut Butter, Salata Aswad.
    Eggplants are fried in oil, then cooked with sautéed onions, tomato paste and peanut butter. Seasoned with garlic, black pepper, cumin and lime juice.

    Great dish love from Sudan.
    A little tip. Soak the peeled eggplant in salted water for a few minutes than squeeze each with your hand to release the water before frying and once you take it out of the fyring pan place it on kitchen paper instead of directly on a bowel or plate this step helps to prevent the eggplant from absorbing too much oil during and after the frying .
    But well done!

      Thanks for the explanation. I see others soak it, and in fact my mother would soak the eggplants first, but did not see the reasoning. Now I know.

    Hi Noela, you have no idea how delighted I am to find this video. As a kid, I spent a couple of years in Sudan and ate this dish frequently, but unfortunately forgot its name because it has been soooo long.     I am going to try this with air fried eggplant to try and cut back on oil. Hopefully the eggplant gets soft enough to mush.

      That works. For better smoky authentic flavor bake your potatoes in a bring oven or over a charcoal grill. When the outside starts crackling then the inside is cooked.

    Question : what is kombo? Not sure if I spelt is right . I have been trying to find the English name for it ?

      It is lye. Made of sodium carbonates and potassium carbonates. Homemade lye that we use as traditional salt acquired from: salt craters in Sudan called Athrun, mineral salt from mineral salt dunes and we distill it locally from ash left from burning charcoal. Use it for a variety of meals to impart a certain flavor and soften vegetables
