That was very nice. It doesn't have to be a prime rib to be good. Top and bottom round roasts can be very good, which you showed. Liked!
I tried this last night 12/15/2021. I subtituted the potatoes with beets and salt with (Badia Citrus Salt). My beef weight 2.47lbs. I cooked exactly to the recipe, however it was well done. I wanted it medium well. Nevertheless, it was still moist and so delicious. We are not beef eaters in my family, but this recipe was absolutely scrumptious and we devoured this dish. Thank you for this great recipe ! One suggestion....check that meat thermometer after the first 30 minutes and also after the next 15 minutes, or should I say each 15 minutes. Mine was way over cooked, but I rescued it with a nice gravy. I think the cooking time could vary by altitude, but at the end of the day - I love the recipe, so thanks again!

What did I call it? Sometimes I get tongue tied trying to explain and be mindful of the camera and cook at the same time. I didn’t even catch it in editing.

could I use dried herbs as opposed to fresh? I've never made a roast ever before and i don't want to butcher it lol
I've only made it with fresh herbs. I'm not sure.
I made my butter ahead of time with dried herbs and fresh garlic. It’s awesome and I can’t wait to use it on my Christmas roast.... so I’d say yes! Just be careful not to use too much

Once the dried herbs are introduced to the butter ahead of time it works
Just make sure its room temperature before you cook it.
