Thanks for the tip on buying the roast a few days earlier and leaving it in the fridge. But mostly, for calming my nerves about how dark they get when we do so. I'm literally making this style roast right now and I'm going to follow most of your recipe. I'm using mine to make red chile. I know it's not the ideal roast for red/green chile. But it's all I have, so hey! I might as well try. 😊

Yes you can sear in the cast iron pan then toss same pan in oven. Uncouved is good. 😎

Yes the same roast. Another name is Baron of beef roast. Cool
