    Saturated Fat:
    Our brains are composed of 60% fat and the majority of the fat in the brain is saturated.
    Saturated fat acts as the insulation coating for your nervous system - when you lack this insulation you become more susceptible to external and internal stress.
    Specifically, the myelin sheath that surrounds the nerves in the brain and ensures their proper function is also largely made of saturated fat and cholesterol.
    Butyrate is the preferred fuel of the cells that line your colon.
    Butyrate is used for energy, especially by mucosal cells that line the wall of the colon - these cells get about 70% of their energy needs from butyrate.
    Butyrate nourishes intestinal cells that line the gut barrier and supports the assembly of tight junctions that seal gaps between gut barrier cells.
    Butyrate promotes brain-derived neurotrophic factor (BDNF), a substance that increases the growth and differentiation of healthy neurons in the brain.
    Mitochondrial biogenesis is the process by which cells increase mitochondrial mass (was discovered that physical endurance training induced higher mitochondrial content levels, leading to greater glucose uptake by muscles)
    Furthermore, butyrate prevented the age‐related increase in Gadd45a expression, a gene that mediates denervation‐induced muscle trophy that is directly regulated by HDAC4, and central nuclei in muscle fibers, suggesting butyrate prevents degeneration of muscle fibers.

    CLA:
    Conjugated linoleic acid (CLA) is a naturally occurring trans fatty acid made from omega-6 essential fatty acids in the rumens or guts of pastured ruminants such as cows, goats, and sheep.
    Conjugated linoleic acids are polyunsaturated fatty acids containing both cis- and trans- bonds as well as double bonds.
    The CLA cis-9,trans-11 is mostly found in foods, whereas trans-10,cis-12 is found in supplements
    Vitamin K2:
    Vitamin K2 activates two key proteins in the body:
    Osteocalcin: once activated, it carries calcium and minerals into bones and teeth - it’s mostly responsible for the dental health and osteoporosis prevention.
    Matrix-GLA: The non-bone and teeth benefits of Vitamin K2 are mainly tied to the action of the matrix-GLA protein - this protein is activated only in the presence of Vitamin K2.
    = protein helps avoid calcification in the arteries - helps stop calcification in the veins as well since the calcium meant for the bones is ushered into the bones and does not accumulate in veins and arteries.
    Vitamin K also helps prevent excess calcium in the brain, and excess dysregulated calcium in the brain accounts for some of the damage from Alzheimer’s.
    Animals grazing on vitamin K-rich cereal grasses - especially wheatgrass and alfalfa in a lush green state of growth - produce fat with the highest amounts of Activator X.
    Vitamin K2 levels will not be high in butter from grain-fed cows raised in confinement feedlots.
    Glycosphingolipids:
    Butter also has a high level of glycosphingolipids within it, so adding butter to your diet can increase your defenses in your stomach and digestive tracts.
    Glycosphingolipids are a special type of fatty acid that can protect your body against a number of gastrointestinal issues and conditions.
    They help create mucus layers along the membrane, making it more difficult for bacterial infections to bind to functioning receptors.

    I can proudly say butter cured my stress and tiredness. I’m not even on a keto diet, I just switched all my fats out with organic butter (preferably ghee when I can afford it). It’s weird, but worked like magic.

    When I moved to the US, the doctor told me to cut the whole milk, have skim milk, and cut butter and use butter substitutes. In two years from following the doctors advice I ended up with acid reflux, and elevated cholesterol, and those were just the start. Came to the US healthy, followed so called doctors advise to the letter, strictly, and screwed up my body.

    I use organic butter made by a Amish Neighbor. I totally trust her butter - her parents are 96 & 97.

      @@7iLeto I talked to an old women that came from a farm in New Hampshire. She said her father lived to over 90, no health problems, and he put tons of raw butter on his bread at dinner every night. Of course though, all the produce and crops they consumed were much better quality back then.

    Super interesting video! Learned a LOT! Would love to see a video about why margarine is bad (been trying to warn people for years). Look up studies done in Australia a few decades ago linking the first generation to have margarine all their life to early macular degeneration. I'm sure there are more recent studies too... but that's the only one I know about.

    Hi Thomas - I am enjoying your channel - Have you ever thought about putting a video together for Shift workers - swing shift and the night shift. How this can help on our health and sleep. Brain fog and loss of energy and how working off hours affects the body. I have not jumped on the Keto diet yet - but I am researching, watching your videos and taking lots of notes.       Just make sure youre not overeating calories. Healthy food or unhealthy, if you over consume calories you gain weight. And if you gain weight, most likely youre gonna get the other health consequences that come with it.

      I leave mine out for a few days, that's about how fast I use a whole stick of kerrygold butter. I also left out a large brick of Irish butter and it lost all of its flavor.

    Did allergie test. Milk and yogurt is my number one problem and egg whites.

    In Indian village where I grew up people have dairy items in a large amount and the bread consumed is only made of millet . However, the butter there is different in look and taste what I have here in Australia.

    I got a about 30 Bricks of Kerrygold Salted and Unsalted butter in my refrigerator and some are vacuum sealed in the freezer. I make unsalted ghee ALL the time :D When it is on sale, I grab it, we go through it sometimes!

Also say you have a really active job where you're on your feet or lifting boxes or just having to use your whole body to do work all day (as opposed to sitting at a desk all day, which has it's own health challenges). I have two part time jobs, one at a desk and one as a massage therapist, that I work each every other day. Since I've been doing this for a couple years my body is keyed in really well to keto and IF and I adhere to the philosophy of eating when I'm hungry. So on my massage days I usually eat my 1-2 meals for that day in the morning before work, and since I work into the evening I usually am not hungry, so sometimes I'll eat before bed and sometimes I fast through the night if I want a longer fasting day. But I'm working doing the more full body strenuous work in a fasted state - I'm not hungry and nor do I eat all through my shift, and I feel really fine because I get my calories and well-rounded nutrition when I do eat. I know I should probably do some other kind of exercise or bodybuilding for those benefits I've heard you talk so much about, but at this time my job is my workout for the week. So what do think the best way to time eating and fasting if your job is like a workout, and your job is your main source of exercise? And what foods do you think are best to have before and after a long day of "working out" on the job?     Fried my steak up in butter & beef tallow for lunch today. Then put some butter in my afternoon coffee....I think that puts me at a marathon run!! And yes, I licked that plate clean! Could let the egg yolks I put on the steak go to waste ;-)

    it is interesting now with current You Tube videos how the food items have changed from bad to good. Sodium used to be really bad for us, now it is good to have. Butter was bad for us, now it is good to use. Coffee I felt was bad for us, now there are some benefits from it.
    Note: I never was a coffee drinker anyway and I don't smoke or drink alcohol.
    So I am amazed what foods we can eat on these diets just by cutting out Breads, Sugar items and which diet we follow, Keto, or Protein, or a mix of both. Learning more everyday and started my serious quest for lower my weight mid March of this year. i am at 197 pounds right now and my first starting goal is to get below 190. I was 206 pounds in March. i also do some daily exercising. Thanks for your videos.

    NZ organic Mailand butter has always been a staple in my diet. I knew it was good for me and this video proved just that.

      I eat this as well but there does seem to be an emphasis on 'grass-fed' butter being the best. This makes me wonder what the difference between 'organic butter' versus 'grass-fed' in terms of Mainland organic vs some other grass-fed option.

    I am now a fasting addict lol. I've been watching a ton of your videos. I do atleast 16-8 everyday, which is easy now and lift light weights and light cardio getting my heart rate up. Every muscle is getting bigger,stronger and leaner while burning the small amount of belly fat that I have. I'm a firm believer that fasting is gonna be the worlds solution to obesity and dramatically dropping the chances of getting many forms of cancer.

      vitamin water is basicaly water with sugar and a tiny percent of vitamin, not healthy at all, they argued that even by containg "vitamin" in their name no one would think that it's healthy...

      I combine ghee, coconut oil, and MCT oil in my tea. It's a good balance of fats, fat-soluble vitamins, and ketone production.

    Also Morley Robbins talked about butter being better than coconut oil. Mainly because of the retinol content in butter. He recommends getting lots of retinol daily. From a high fat diet we only get so many calories a day. To get the 9000 mcg retinol daily without supplementing CLO we pretty much need to get all our fat calories from quality animal fats. Especially grass fed butter.

    Thomas, could you do a video of the energy drink "Bang". It appears to be good for keto and fasting but I always appreciate your insight and would love to see you break this down for my wife and I.       I used to drink them all the time but I’ve since stopped. They have 300mg caffeine which is excessive and caffeine has a half life of 6 hours and a quarter life of 12 hours! Meaning if you drink it at noon it will still be 1/4 left in your system at midnight! And with that amount it definitely contributes to sleep disturbance and if you get into the research on sleep.. that’s another rabbit hole but there are all kinds of effects on the body including body composition. The other bad ingredient is Sucralose which will spike your insulin so don’t use that when “fasting” because you will technically break it and also that is said to mess up your gut bacteria and Thomas himself has videos on it and even says it’s a bit of a neuro toxin in that it creates a sweet excitability effect which isn’t good. Anyways, I am back on to quitting caffeine altogether but if you don’t want to do that you can drink black coffee, teas, or Zevia which uses liquid stevia which is okay(the powder stevia actually contains maltodextrin which is a sugar). I drink the Zevias that don’t have caffeine and they taste pretty dang good. ✅

    I'm currently following your 4-week keto plan thingy, loving it btw! I'm on the end of week 2 and I seem, to feel really bloated on the days I do my 16-18 hr fast? I eat like 700 cals or so in one meal and that's all I eat for that day (dinner time ish). I just feel puffed and was wondering if IF is just not for me?     In the UK Waitrose sells an unpasteurised French butter from cows which graze on salt marshes in Normandy. The best butter after glacial melt pasture but I've never found it for sale.

    Around my time of the month I craved sugar so bad so I would just stick to oatmeal and peanut butter and honey and I was never satisfied this time around I wanted butter and potatoes! I ignored butter for years! I thought it was just another bad craving I told myself if I still crave it the next day I'll eat it and the morning I did I had 2 medium potatoes with real butter! My small headache I usually get left! Also I wasn't hungry litterly after 8 hours wtf I will never cut butter out again it taste good and makes me feel happy!
