    Curtido is a Salvadorian condiment made from cabbage and carrots, pickled in vinegar with spices, which is often served with pupusas.
    Prep Time: 10 mins
    Cook Time: 2 mins
    Rest Time: 2 hrs
    Total Time: 12 mins
    Ingredients
    ❒ 1 lb cabbage , shredded
    ❒ 2 large carrots , shredded
    ❒ 1 onion , thinly sliced
    ❒ 1 cup apple cider vinegar
    ❒ 1 tablespoon salt
    ❒ 1 tablespoon dried oregano
    ❒ 1 tablespoon crushed red pepper
    ❒ 2 bay leaves
    Instructions
    ❒ Place cabbage, carrots and onion in a pot of boiling water, and cover for 10 minutes.
    ❒ Drain while leaving some water in the pot.
    ❒ Sprinkle with salt, oregano, crushed red pepper and bay leaves.
    ❒ Transfer to a sterilized mason jar, cover with apple cider vinegar, then seal.
    ❒ Refrigerate for at least 2 hours, preferably 6 to 8 hours before serving.
