Curtido Recipe - Pickled Cabbage for Pupusas

  • Here is an easy simple recipe to make Curtido which is a pickled cabbage that is usually served with pupusas.
    INGREDIENTS
    2 1/2 to 3 lbs head of cabbage
    1 onion
    1 medium to large carrot
    1 cup apple cider vinegar (you can use whatever you have)
    1 cup warm water
    2 to 3 tsp kosher salt
    1 tbls dried oregano (or to your taste)

    Made this finally and...*drum roll*...everyone that tasted it said it was soooooo good. I did add pickled jalepenos and even my MIL said it tasted fresh and better than the el salvadorian restaurants. I told her I watched your channel to get this awesome, easy to follow, and simple recipe. It's a family fave. Thank you again gochujang mama!

    When I saw the pic, first thing I thought was "this is pikliz"! Gochugang Mama mama makes pikliz? 😳
    Pikliz is the Haitian version of this salad. Only difference is that ours is very spicy, & we add mainly lime juice & maybe a lil vinegar.
    We eat ours with griot, which is fried pork, similar to chicharones, fried green plantains & other fried meats/fish.
    It's been years since I've had Salvadorian food, I need to catch up. 😌

    I don't usually comment but I followed your recipe but I saved a cup of that boiling water for the vinegar mixture. It came out great!!! I will be making your pupusas recipe next.

      Hmmm...how much lemon does your grandma use? Do the cucumbers get soggy? I am going to make curtido this week. Do you mind asking her?

      Juice of 1 lemon or a large lime (more Latino I think, living in Mexico) Cucumber sounds good though

    I added a similar comment on the recipe for the chicharrón, and that's the addition of Mexican oregano. It's essential for the curtido to taste authentic. To this amount of cabbage (the whole head), add 1 tbsp of it.
    One other thing, soak only the cabbage in the hot water or your flavors from the onion and the carrot won't be as bright.
    Excellent recipe otherwise!!
    And, folks, don't be afraid of using plain white vinegar! It tastes just as good!

      Oh, yes I agree, and meant to ask concerning using Mexican Oregano in stead of regular? Also wondered about the soaking only the cabbage too. Thank you for clarifying this.

    Love your videos 💜💕💖💛. Make your own pineapple vinegar, 4 parts pineapple juice to 1 part Apple cider organic unfiltered vinegar. place in a jar covered on your counter for a day, then refrigerate for a week before using, the longer the better, works great.

    Made this last night and today made pupusas for the first time and WOW this recipe taste exactly like the spicy Carrots I get at mexican restaurants! Great recipe thank you! And the pupusas where delish too....I also followed your pupusas recipe but the filling was with homemade chili!

    I missed this! I watched your video on Pupusa and forgot to watch this. My youngest daughter is married to a young man from Mexico, and she has taught herself to cook authentic Mexican food.     I'm curious how long this stays good for in the fridge. I love this from a local restaurant and so glad that I can make it now. Thank you for the recipe!

      It will last for a long time because the vinegar and salt keep it from spoiling. However, the best taste is for about 2 weeks. A month is pushing it. Feel free to keep it longer though because regardless, the flavors are great!

    Interesting. I am Indian Cabbage is not very respected vegetable even with vegetarians though it is very cheap.I made it but added some garlic flakes. It is very attractive and got appreciation even from cabbage haters

    what is the ACV vinegar for. I add my fixings and then salt. Let sit for a couple of hours and massage cover with towel over night. Massage and can up. Let sit on counter for 3 weeks till I want to eat. Sometimes as long as year.

      Onexpresso, seeing this recipe also reminded me of Sandor Katz recipe for sauerkraut. Eliminate the vinegar, use more salt and let it ferment on the counter for at least a week, and you will get your probiotics too!

    I was blessed by one of my Hispanic co workers with Pupousa and Curtido I really loved it especially the Curtido. I want to make this but I'm out of oregano and I have white vinegar and not apple cider. Can I substitute or will it change the outcome of the flavor?

    As a regular maker of both kraut and kimchi I'm going to give curtido a try. If you allow it to ferment in brine is there any need for vinegar?

      The jar I made lasted me 3 months in the fridge without going bad. I'm really not sure of the proper shelf life, but we finished by the 3rd month and it was still good. 😊
