Yes you can , just cover the dough , to prevent it from drying out
Should I add more flour if it still feels really smooth?
No , i should be smooth , and some how watery , i have showed in video the consistency, if you add more flour the inside will be doughy and wont be crispy

You didn’t add baking powder or baking soda will it raise and come ?
I added yeast , it will raise better then baking powder

If you want serve them later , do not pour in a sugar syrup , store them separately in a air tight container,

Do not dip them in the sugar syrup when you take them out of oil , for next day just heat the syrup and dip in it
