    Just thought you should know I served this recipe to a group of 45 teens from South and East LA who had never had curry in their lives and they scraped the pot! Thanks so much! I'm always trying to introduce young people to different cultural dishes and vegan healthy options and this recipe really knocked out of the park both of those goals :)

      The Endless Meal had such a positive reaction with the HS youth that I tried it with middle school age boys this week and added mushrooms to it, well, I wish you could have heard them talking about tomatoes and mushrooms and all sorts of vegetables. It was amazing! I look forward to trying more and more of your recipes with them 🤗

    Just a tip, wait to add your tomatoes or anything acidic when cooking lentils! Your Lentils will soften up so much better without the acidity.

      jonsiiin why are tomato’s acidic ? Plus even if they were how would it make a difference cuz you consume it anyway

      jonsiiin tomatoes are alkaline. That’s why I asked. The opposite of acidic

      @@sergezerkin I'm not sure that's accurate. Tomatoes have a ph around 4ish ... that's acidic?

    This was really tasty! I made it without ginger or garlic to keep it simple. One thing I would change is the cumin seeds. They stay crunchy and it's not very nice in the soupy texture. Ground cumin is better.

      They prolly turned crunchy bc you burnt the seeds. They usually go undetected if you fry em right. I actually prefer the seeds as they are much more aromatic

    Normally when I cook with dried lentils, I wash them in a strainer like you would with rice, then soak them for 12 hours. Makes them a little less chewy and starchy.

    I loved this meal! Had it with couscous and added silver beet in final 5 minutes. Kids loved it too!

    I tried this with pre-cooked chicken breast and it was lovely !! Depending what the butcher has I'll try pork or beef next !!

    Just making it now. After 40 minutes the lentils are still a bit crunchy. Will simmer another 10 minutes before adding coconut milk.

    I'm a little confused, this tastes great, but it's basically lentil curry SOUP, I think a single cup of water, or even NO water might have been a better idea. That or possibly add another cup of lentils.
    I'm currently trying to simmer off the water after eating a little in order try to thicken this up.
    Even with rice it's very soupy. I only added 2 and 1/4 cups.
    I did soak my lentils for a couple hours before hand, but they definitely didn't absorb 3 cups of water, maybe half a cup at best.

      Not in this recipe. There is tons of flavor with all the ginger, garlic, onions, turmeric, cumin, and coriander. :)

      Curry powder is pretty much just all those spices powdered up, anyway, so in a sense you made your own :)

      You can but you'll need to reduce the cooking time (and probably the liquid) as red lentils cook a lot faster. :)

      I think cows milk would make it too thin, but cream would work.

    Looks great. But in the description it says "Curry" - you didn't put curry powder in it. Only turmeric, it looks like curry powder, but it's two totally different things

      Curry powder is a blend of spices. Instead of using that, we use the whole spices that are used to make curry powder. :)

      Red lentils cook much faster so you'll want to reduce the cooking liquid and time.
