      I thought the Tongas used holes, coals and palm fronds. That's how I always did it.

      Quick question, please? I'm going to cook a 50lb pig. About how many hrs do you figure it would take to reach an internal temp of 165 F?

    On your website on a few blogs and on this video it suggests to lower the pig for the last 30 minutes for crackling. But at your pig masterclass demo the other weekend it’s said to lower it for the first 30 minutes. So which is it? Cheers

      Cracklings are definitely done at the home stretch stage of the cooking. Doing it at the beginning would yield you nothing but a charred mess

      Hi there! The ideal positioning of how high or low the pig is on a spit depends on the intensity of the charcoal's heat. As mentioned in the video, if you're able to place your hand under the meat for about 7-8 seconds, then, it is the correct height. We also appreciate your feedback and thanks for watching.
