I wouldn't build cabinets. Buy a hoosier or an antique, large buffet cabinet with shelving on top. Then, when you move out, it comes with you! Great apartment! As a full-time artist, I'd love that third floor as an art studio set-up. A painting room and then a collage, book-making room!
