I find it easier building this in a form (I use a loafpan for rectangle cakes), also because to get it moist I use some vegetable broth. Sandwichcake is a favorite 😍

Your recipe is absolutely fantastic and the final product looked very elegant as well! Completely unrelated question: What do you do with your basil to make it thrive and look so lush? Mine did well for a few weeks and now it is looking sad - a problem I always have with store-bought plants ;/
Store bought basil plants are normally loads of tiny plants in 1 pot, so end up overcrowding each other, try thinning them out so they have room to grow healthy - you could carefully re-pot some of the plants or just eat them. Also they like warmth and plenty of sunshine :)

This is genius. My 6-year old daughter asked for a cake with cucumbers as cakes are usually too sweet for her taste (I wish one of my other kids would say something like this, they would eat sugar right from the bowl).
We have something similar in Brazil, traditionally filled with chicken or tuna, but the vegan version would be so much better, with lots of fresh flavors. It is usually served in parties but it is not very common nowadays. How interesting, right? But it's definitely not as pretty. Yours looks amazing! Sending lots of love from São Paulo!
