    I’m here for back up, got a meat slicer for Christmas. I’ve been out of town,and my goal was to use the slicer to make crisps today. So, I’m reviewing directions to dry in an oven. My dehydrator only goes to 158, and I wanted a higher temp. My oven goes to 170, and that seems safe to me. I’m using Chuck roast, and the slicer and the roast, are a great combo. Thanks for all you two do!

    How did you hear me all the way from Florida saying I wanted to make my own carnivore chips?? I just spent yet another $200 on store bought and had decided that was just crazy and wanted to try my own. How hard could it be right??? I already have a freezer full of beef from a regenerative farm, a bunch of Redmonds salt, and a meat slicer. Along comes Joe and Rachel, with all your great tips from your experiments (so I don’t have to). After I watched the video I paid a visit to Santa (he was at Amazon, right inside my iPad) and lo and behold, there were electric smokers …for about $250!! I did the math. Very excited to try this! Thank you so much ❤❤

    I really love the facts that the two of you do the cooking together.     My favorite is Sirloin Tip Roast from Sam’s Club. Less than $5/#. I shape in a round roll using plastic wrap and the elastic that is on the roast, freeze, slice. Dehydrate 160 for 4 hours, then 145 for 18-20 more hours. I season with Redmond smoked salt or salt. Crisp not crunchy, almost buttery, like thin pie crust. I have never tried carnivore crisps so I have nothing to compare. Also love pork roast (cryo vac) too.

    Great backpacking food. Carnivore crisps is 270 calories per 1.5 oz of brisket. That means you can pack for four days with about 4 lbs of food. That's an amazing calorie to weight ratio. I took some on the Florida Trail in 80+ degree heat last week and it kept just fine.

    I've been making carnivore chips for a year or so and just love it. My favorite, which surprised me is doing pork loin. In fact I just made a batch of pork and beef over the weekend along with some jerky 😁

    I am trying out my new dehydrator so I’m rewatching this video. It reminds me that we haven’t seen any “So easy even Rachel can make it” vids lately. I’m guessing because y’all are so busy with the new property etc. 🙂

    We usually get 6 to 9 deer a year. We make our own crisps and Jerry. We also dehydrate the hearts and livers for our dog's treats❤️

    This is pretty much the way that i made a similar product a while back in my dehydrator. I got thinly sliced NY strip steak from Costco so I want straight to laying them out on racks. It turned out really really good. I spent $40 on the meat and got enough dried meat to fill a gallon zip lock and a quart zip lock. I forgot to weigh it though.
    I have been looking at meat slicers though so I can make this at home easier.

    Hello Joe and Rachel. I’m a new subscriber and late to the Keto/Carnivore way of eating. So you may not see this comment. But I’d like to thank you both for this video as I recently discovered the Carnivore Crisps product from another channel I follow. So I ordered a variety pack of them and they are great. The downside is I live in Canada so they aren’t available here that I know of. It took 3 weeks to get them, and yes, not cheap. So I appreciate seeing there is a homemade option to the same result. Thanks for sharing, Peace and Calm. 👍🏻😎🇨🇦

    I love making my meat chips. The butcher slices it and Redmond smoked salt and in the dehydrator. Mmmmmmm so so good

    Have been making something similar but with dehydrator and mostly with ribeyes. I place ribeye in freezer for 1.5-2 hours. Then thinly slice with serrated knife. Place in dehyrator at 165 for 8 hours. Makes for a great "carnivore" meal.

    I used a small chuck roast that I sliced really thin. I smoked it on my Traeger pellet smoker at 180 for 4 hours. It tastes awesome. A little chewier than the Carnivore Crisps, so I may try the shaved beef from Aldi next time. I'll eat what I have, but it was too much like jerky that I've never liked.

    I can't afford to buy a slicer like that, even at $80. I was going to try using my blender then rolling the meat "paste" out super thin. Then put it in the oven on low heat to make my meat chips. Was going to try doing it the other day, but we didn't have anything for supper, so ended up cooking the chicken tenders. We now use pork rinds smashed for our breading! and it works so good! We only use either bacon drippings or olive oil for cooking now. I haven't been good at keto. I have stopped drinking tons of poison coffee creamer, but still use a coconut based creamer that contains some sugar. I know I'm bad! I just can't give it up yet. Trying hard to stick to my strict diet to reverse my diagnosis of non-alcoholic fatty liver. No more processed foods for me when I can avoid it. Being on disability I just don't have much money to buy the grass fed meats and healthy vegies. I only eat meats, eggs, avocados, and green leafy vegies, some celery and cheese as well. That's it. Lots of water and enjoy a bit of vinegar in my water and to make my own salad dressing. Love wilted lettuce...hard to find tender enough greens for that this late in the year.

    I'm a new subscriber, so glad that I found you! Thank you for this recipe! My 11 yr old son LOVES beef jerky and I'm thinking that he'd love these too, so we're going to try making them with shaved beef. This paired with some cloud bread in his lunch would probably be a fun treat and something else that his classmates are going to want to steal from him, lol. My son does not have a weight issue at all. I am just trying to incorporate more protein into his diet, as I'm sure that he gets tired of ham sandwiches everyday, and that's his choice. Thank you :)

    Ok, I have a meat slicer and a Nesco dehydrator! 🥩 I need is the meat! 🥩My oven runs so hot that it is too unreliable to use at all! But the dehydrator will be fine! My slicer is 200W so that should be ok, too! Thanks for the lesson!

    Have you ever tried freeze drying after you smoked. I was thinking of making a batch of bulgogi, cooking it on my Traeger then freeze drying it.

      You can come close to making your own keto bricks at home but honestly the cost of ingredients is so high that its cheaper to buy them from Keto Brick

    My son and I have been making something similar with round roast. He hand slices it, and we use salt and pepper. We also use a dehydrator. I like mine really dry, like a cracker, then eat it with butter. Addictive! My husband wants to try using the smoker (gas) this year. Yummy 😋

      it really depends on how you package it and the fat content. Fat can turn rancid if exposed to air If you vacuum seal it, a couple months. In the fridge, several more months.

      the masterbuilt ones are good. You can get them for around $250 or less at home depot and there are lots of used ones on offerup

      You can use any kind. We prefer rib roast or strip roast

    You guys are funny to me, just cuz my mind works so much differently than yours. Rachel asks about using the sliced meat for cheesesteak and says you can make your own steak-umms. Meanwhile I had the opposite thought. I was thinking I wonder if you can just use steak-umms if you don't want to buy a slicer. Obviously you don't have control over the quality of the beef, but at my walmart the family size box comes out to about $5/lb. I guess I'll just have to get a box and try it out.

      You can make it in the oven. Place on a wire rack and bake oven to 170 degrees. Since there is no airflow, you will probably have to rotate a couple times

    My smoker is tiny so I’m gonna try this in the oven first. Should the sheet pans have racks on them to raise the meat out of all the juices whilst cooking? Also, could I use thinly sliced roast beef that I’ve already cooked and just cut back on the cooking time?

    There is no alternative to a meat slicer? That’s so disappointing! I don’t have the room for it… I will try buying Hot Pot meat from HMart but it’s substantially more money
