Another variable that affects puck volume and headspace is roast level. Darker roasts will take up more volume than the same weight of a lighter roasted coffee. Something good to remember when dialing in a new coffee.

I have a ECM Classika and Rocket Fausto at home in Yorkshire so I am familiar with the principles but being tipped off with the finer points of this machine are most welcome. I was a little confused about the puck prep. Would it be useful to use WDT, tamp, then razor? Or is wdt unnecessary if you are going to tamp then razor?
My Duo Temp Pro usually has ±10 sec of pre-infusion. Do you count pre-infusion in your shot timings? Since it is such a long pre-infusion i'm not sure if i should aim for a 30 sec shot (which would be 20 secs from first drip)
Okok, you are not making it easier to choose. Could you do a comparison between a Duo temp pro with control dose pro vs. Barista Express and/or a Duo temp pro with smart grinder pro vs Barista Pro?

You're very welcome :-). In theory steaming the milk first works better, as the milk is a bigger volume of liquid so it won't cool down as quickly as the espresso will, and pulling the shot takes less time than steaming milk too so your espresso would be sitting for longer than the milk would be, as long as you do your puck prep first before steaming your milk. In reality though I don't think you'll notice any difference in cup quality whichever way around you do it. Cheers, Kev.
Hello, is there an obvious difference in quality between Gagia New Classic Pro Evo 2023 and this Sage Bes810_Bss Duo Temp Pro? In the country I live in, Sage Bes810 is cheaper than Gagia. If there is no obvious difference in coffee taste between the two, I will buy Sage.
Hi, the DTP is a great machine that is really easy to use, the Gaggia Evo is a great machine also but it is a bit more quirky and can take a bit more learning and patience, both can offer great tasting coffee. Cheers Kev

My other question is, is there a significant difference in the coffee taste between the De'Longhi Stilosa Espresso Machine EC260.BK model sage duo temp pro? Stilosa ec260 is quite affordable.
It depends on the bean, generally speaking I'd expect the razor tool to hit at 19, but not always, you can't really dial that way although it often gives you a fairly good idea.

@@dotshorty you time from when the water hits the puck, so in this case with preinfusion and then adjust according to taste
