    Focaccia (I used this recipe: www.bonappetit...)
    Roasted potatoes (boil potatoes until tender, add oil, bake at 450°F for 25 mins, add salt)
    Pistachio Biscotti (will be in my next cookbook!)

    What....how does one culturally misappropriate red sauce 😂 people are so uptight about the origins of food they fail to realize the resources they have in different countries/timeliness is part of the human experience WITH food. Also kudos to your father in law for putting carrots in red sauce to make something for your mother in law. That's love right there❤

      @@TheKoreanVeganItalian (from Rome), doing locums as an OBGYN in London, USA, Milan, and Rome, here! Carrots in red sauces is required lol. It is called “battuto” when uncooked and “soffrito” (the aromatics used when slightly fried, as the word means). Non-Italians with Italian last names in America need to get a grip. Your great, great, Nono, who you likely call grandpa or pappy or whatever, came to ellis island in 1910. You’re a white American and you’re annoying real Italians by claiming authenticity when you’re really using recipes that were recreated by immigrants who lacked authentic Italian resources.

    The sheer amount of veggies I'm willing to add to red sauce these days.😂😂😂 It's turned into something else and I add red lentils. I love red sauce and I can't even enjoy it without all of my extras anymore. Plus lots of people add carrots as a natural sweetener. Keep making your recipes; you have a real talent for it!

    I am blessed with a good relationship with my MIL as well and this is so sweet and loving. She knows with your revile book that a special piece of him is cherished and carried. That’s a beautiful gift.

    As a Korean American, if you ever look into the Ancient History of our ancestors, you will see that other cultures like the Moors, Bazantine Empire, India, Mongolian Empire, ancient Three Kingdoms (where modern day China and Japan is)influence our culture and food of old that eventually on to influence parts of Eastern Europe and South America. You realize from our great Ancestors like Jang Geum Suh, that food is about keeping it balanced in flavors and natural, having dedication to cooking, innovation on better cooking methods and consuming the right foods for one’s specific body type.

    Because of you, i started to cook more often and also really enjoy it! I love the feeling of accomplishment when i see the happy faces of my family reacting to my dishes. Someday when I'm older and own a home i will definitely try some of your dishes too. Im really thankful that you are such a wonderful person and help others with your stories and your cooking😊

    Culturally appropriating red sauce? Where did Italy get their tomatoes? Their pasta? By comparison I think carrots are a bit closer

    Watching this made me want to come over for dinner even though I'm not a family member. But I'm very handy in the kitchen with chopping, dicing and other assistance (hint, hint!!!!).

    Farmer's market carrots in a creamy sauce with fresh parsley is a fantastic pasta sauce. A summer favorite.

    Oh! I also use carrots in tomato sauce, and sometimes I use grated beets. It looks really good! And, do you have the recipe for the foggaccia? I never hit the dough point. But, after all, vegan cuisine is all good, with nutrients, beautiful and tasty. Use creativity! ✅✅✅🏵

    My mother taught me to use carrots in our Italian red sauce too. Doesn't it drive you crazy how some feel the need to scold you for what you have learned and how you cook? grrr. Keep on keeping on -- love what you do. Oh and ... I truly love that you demonstrate so much love in how you cook for others. I relate.

    What vegan brands do you like to use and not like to use?

      I really like field roast-it’s one of the few “meat” subs we use. We also like Plantspired galbi (my non vegan fam LOVES it). As to vegan butter, we use country crock plant butter, earth balance. For eggs we use JUST Egg for cooking and aquafaba + silken tofu for baking. I hope this helps!

    such a beautiful video! I do wish i liked cooked carrots as much as some people to cook with it myself but the sweetness is a bit too much for me sometimes, ofc i'd never complain if someone made that amazing sauce for me though! weirdly raw carrots with some rice vinegar or lemon juice is one of my favorite healthy snacks haha

      I've heard of recipes where they put a big chunk of carrot in and pull it out before serving, or puree the carrot before adding to the sauce.
