How to Make Buckeyes

    Ingredients
    2 cups creamy peanut butter (not "natural" peanut butter) (475g)
    1/2 cup salted butter softened (113g)
    2 Tablespoons brown sugar* packed
    1 1/4 teaspoon vanilla extract
    3 1/4 cups powdered sugar (405g)
    12 oz dark chocolate melting wafers (340g)
    Instructions
    00:00 Introduction
    00:15 Combine peanut butter and butter in the bowl of a stand mixer and beat until well-combined. Add brown sugar and vanilla extract. Stir well.
    Gradually add powdered sugar until completely combined.
    02:02 Scoop into Tablespoon-sized balls and roll with the palms of your hand until smooth and round.
    Place on wax-paper lined cookie sheet and freeze for 15-20 minutes.
    02:32 While peanut butter balls are chilling, prepare your chocolate according to package instructions. Pour into a deep dish (I use a wide cup).
    02:52 Remove peanut butter balls from freezer, spear the top of each peanut butter ball with a toothpick and, holding the toothpick, dip each buckeye ball into the melted chocolate.
    Return to cookie sheet and remove toothpick. Use the pads of your fingers to smooth over the toothpick mark.
    Allow chocolate to harden before eating and enjoying.
    Buckeye balls are best kept refrigerated.

    I actually like the peanut butter just a little gritty. It adds a nice texture to each bite.

    Almond bark chocolate and white for coating. That’s what I use. It’s all great though.

      My mom and my grandma made batch after batch for Christmas, since, we have a lot of family on my mom’s side and,( lol, it’s about the same in my dad’s side) but, most of everyone in the family likes grandma’s buckeyes, peanut butter fudge and, nuts and bolts! ( that’s what Check’s Mix is actually called and, that’s what we all knew it as) But, we tried the White Almond Bark one year, when, grandma thought she’d make at least one batch that way. Well, she used white Almond Bark and, we just didn’t think it tasted near as good!

      I would probably just leave out the shortening, your chocolate will just be a little thicker. 😊

    I tried these out, and they taste really amazing (but a bit too sweet, so less sugar next time)!
    Also my buckeyes were not this pretty, I need to work on my chocolate dipping technique 😀

      Put your tooth picks in your pb balls BEFORE you put in fridge or freezer. Makes dipping in choc so much easier.

      The chocolate won't be quite as smooth and pourable, but it will still work. :)

    I wonder if adding molasses instead of brown sugar would add the flavor without the grittiness. Brown sugar is just sugar and molasses

    I attempted to make these but my dough came out to mushy. Not dry or clay consistency like yours. It was hard measuring the peanut butter, you think I got Too much peanut butter in there?

      If your butter was too soft it could cause some issues, or you could have needed a little more powdered sugar to thicken it up. :)

      They don't need to be refrigerated, but some people prefer them chilled. It's a personal preference thing. :)

      You've found it! If you use the melting wafers there's no need for shortening.

      I only add shortening if I use chocolate chips. Use 1/2 to 1 teaspoon. 😊

      It would be tough to mix together. You’d have to make your butter really soft before you start and you will have a heck of a workout getting it together. Good luck! 😊

      WWE Mashups, Stop Motions, Covers, and Themes i make this like 2 times a mth easy way use a 1/2 jar of pb skippy or jif works and tastes best 2 cups powered sugar teaspoon vinalla and 3 table spoons of butter melted mix butter pb and vinalla togather till smooth with a big spoon i add a few grinds of sea salt as well then i sift in the powered sugar and fold and mix scraping the edges so it all gets mixed then i chill the mix for 15 min roll out the balls i use a teaspoon you will get 30-35 balls then i freeze them and melt 1cup of milk chocolate chips for 30 sec i the microwave then 2 more times for 15 sec i also add one teaspoon of coconut oil it makes the chocolate shiny and a little thinner so it coats well the i put them back in the freezer to set up and yum yum

      @@doghouse0872 Thank you! I made mistake of adding melted butter to my melted chocolate chips and it ruined it. It became hard and clumpy. I have coconut oil on hand so I will try that instead.
