Hi Kathryn! Lucky you! Good news, sad news... jam yes, cobbler no! Dried and then soaked apricots won't work in a cobbler as they're too wet and the dessert will be runny. BUT, for jam, they'll work perfectly. I'd soak them first then proceed with this recipe, complete with a secret ingredient - SO AMAZING! First other recipe as I scrolled… In a blender… 1 cup dried apricots 1 cup dedicated coconut 1 zest of lemon When the mixture is combined into a doughy texture… Roll into balls and roll into some extra coconut! They taste great at room temperature and refrigerated… even better!!! Thanks so much for replying and I’ll keep you posted on what I’m going to do with the rest of them !?! Next I will endeavour to make a jam/marmalade using coconut sugar instead of processed sugar… fingers crossed 🤞🤗🤭
Looks delicious I'd like to try it. But after 40 min of baking, how do I ensure it's done? Will a toothpick inserted not to deep come out clean? because I see the apricots underneath will be moist.
Hi Kim! Thanks for watching and, for writing in. LOVE this idea, but, have never tried canned. Thinking about it - it should work - only suggestion is to drain them and try to dry off any liquid. You certainly don't have to use the OJ... but I think it adds a little brightness to the flavour - your call! XO
