I made this recipe twice already on my kamado bbq. I use a slightly different rub but otherwise mostly the same. It's extremely tasty. I served it on a boa bun with some pickled cucumber and cilantro. It's a hit everytime I make it. I highly recommend making this!

Bro the last time I made bacon burnt ends, I made them with a side of navy beans. I usually make my bbe’s with a glaze. When we were done I put beans with the glaze and chopped the burnt ends a little smaller and made bacon burnt end baked beans and OMG they were amazing!

I followed the recipe. Cured for 3 days. Smoked for 2 hours and finished in pan. The fat came out rubbery on the bottom. Trying to figure out what I did wrong. If I cut that thin piece off the rest is awesome.
My thought is to slice the bacon into ~1/4" thick strips, then cut each strip into 4-5 pieces about 2" long. This should let you get it crispier and render out more of the fat.
Hey Bradley, Is there a difference in pork belly burnt ends verses bacon burnt ends besides the cure. I make pork belly burnt ends all the time but I never cure first.
Im thinking you take that rendered fat, add sauted red onion, sliced cooked potatoes and aple cider vinegar to make a german potato salad. Garnisg with green onions!

Yeah the cure is really the only difference. I do pork belly burnt ends all the time, but have been wanting to try these for a while.
The curing process makes the belly a little more dense and kind of intensifies the meatiness.
