why not just slap these rubber connectors on ends of gear
in fact, that way you can easily get 4 clicks per rotation
and there's less moving parts which means less friction and thus more speed
bad idea to force the rubber bits to have to flick past the end of the mouse, much worse than undulating motion

Presumably there's an upper limit on how many clicks the mouse and the computer can even register.
That limitation is often the cable's maximum data rate rather than the computer or the mouse, however cheap mice like the once used in this video may also limit how many it can register due to a cheap microchip.
