to save you 12 mins here's the recipe - microwave 1 cup frozen berries 2 tbsp powdered sweetener till you can mix it, let it cool ½ cup heavy cream - mix to stiff peak in a separate bigger bowl, add 1 cup low carb Greek yogurt 6 tbsp powdered sweetener 2 tsp vanilla flavor (or 1 tsp vanilla bean paste/extract) ½ tsp lemon juice ¼ tsp salt mix add 1 cup almond milk to yogurt mix, mix then add this mix to the heavy cream she added this mix to the popcicle mold first, then added some berry mixture on top of each (she's using the verticle molds). you could also just add the berry mixture to the other mix. and pour the result into the molds.
I made this recently. Delicious and very low carb, in comparison to other frozen yogurt recipes. I didn’t have popsicle moulds and they appeared to take up a lot of room. I had bought some silicone, baby food pots, designed for transporting and heating baby food. They are four ounces and have a microwave air slot at the top. There are six of them and the amount of ingredients for this dish fitted perfectly. I put each one into defrost for 20 seconds before eating. This softened it enough to stir the fruit that had settled at the bottom, so it was evenly blended .
First of all....... this was so delicious and I totally forgot the Almond milk lol. My 1 and 2 year old babies were all over the mix before I even put it in the freezer. My mom, who hates almost every keto thing I make, loved it. She said it didn't taste keto and that it was the best popsicle she's had....... what a compliment. Thanks for the recipe!
