I have a controller button built into my wall to open/close the garage door. Would wiping the memory delete the wall control as well?

Yep wiping the memory wipes the memory.

We have the exact system you are showing and one of the controllers was stolen from our car recently.
i want to reset the system so that the stolen controller, if used ,wont work and that the existing one does by re programming it and following your instructions?
Will this work?
And by re setting it will it give out a new code to use or revert back to the old code?

Once you wipe it the stolen controller will no longer work. You will need to reprogram all your other controllers for them to work.

Could be a faulty door opener or could be that the garage door spring has lost tension making the opener work too hard. Try tensioning the spring, but be careful there is a LOT of tension in the spring, there is videos on TH-cam on how to do it.
