If use keep the liquid from beans or lentils from a tin you can use 2- 3 tablespoons in place of an egg. Just beat it till light and fluffy like you would an eggwhite. Now only fold it in your mixture because this keeps the air bubbles that helps it rise better. I tried it only once in a recipe replacing one of two eggs. Im experimenting with it.
A lot depends on how many grams in 2 cups of ground flaxseeds. Using Chronometer Spectrum ground flaxseeds is 456 grams. However, there is another ground flaxseed that comes in at 240 grams for 2 cups. Obviously 5 eggs with 240 grams is way too many eggs.

MY FLAXSEED BREAD RISES RIGHT OUT OF THE PAN AND VERY AIRY. I USE XANTHAN GUM AS WITH THE EGGWHITES ITS ACTS LIKE A GLUTEN TO HOLD THE AIR IN.

It's better with yeast more bread like. Also 1 teaspoon baking powder and egg whites.
As baking powder is just for fluffiness, I would prefer to create my fluffiness by whisking the egg whites to fluffiness and avoid baking powder.

Rather than greasing the loaf pan parchment paper is an option.

Because there is no gluten in flaxs seeds, it's gluten in wheat that prevents bread from falling, souffle' also will rise and then fall, it's normal
