      If you have Doenjang or Samjang paste instead of Taujiaw/Tauchoo/Miso, just go ahead and use it. The taste is quite similar

    I really love how you always emphasize the fact that we should taste our food. Sometimes people get so caught up in recipes and exact measurements; yes while recipes do serve their purpose - cooking is a lot more about feeling your food.
    In short, I love how more "organic" you are when it comes to your recipes. It gives a much more relaxed vibe!

    Vegetable Pad Thai is my wife's go to dish when we go out, I made this tonight just as instructed, thanks alot, looks like we aren't going out anymore and I'll be cooking this every Thursday, but on a happy note, you are right, it is super easy. Please make more vegan recipes, you are a God send!!!

    My wife made this for dinner tonight.
    We bought a combo pack of noodles and sauce at the Lotus's in Nang Rong.
    She made with pork and garlic chives from the garden and it's delicious!
    Can't wait to have it again.

    If a noodle dish looks like it's "clumping" too much, I always find that switching to a pair of (bamboo) chopsticks in each hand gives great control to lift, separate and toss the ingredients through without breaking up the noodles too much.

    As a "Flexitarian" I toe the line between vegetarian & carnivore but am constantly on the lookout for good vegetarian dishes to bring that toe firmly over the line. This is going on my list of must tries. Thanks for sharing!

    made tamarind paste few days back and tried this today and i’m so happy i did! it tastes really similar to pad thai except that it’s more tangy and less sweet i think? lime was not necessary as you said. thank you big time for this wonderful video!!!

      Hi Camilo! For deep frying or stir frying any neutral vegetable oil will do - but for deep frying she tends to use Canola, and for stir frying Avocado oil. Cheers! Adam

    Thank you so much for this recipe! I am Filipino and transitioning to vegetarianism, and was getting worried about satisfying my Asian food cravings. It seems like so many of my favorite Filipino, Japanese, Chinese, Vietnamese, Thai, and Korean dishes rely on meat and/or flesh-based products (like fish sauce or katsuobushi). I have made this a couple of times and am so glad to be able to add it to my developing vegetarian repertoire....

    Amazing thank you for a vegan version 🥰 in Thailand I used to struggle finding this, so I just gave in and had their "vegetarian version' with fish sauce and tofu etc... I'm gonna try this out soon, I hope I can find the fermented soybean sauce in our area :)

    Okay I made this tonight but I added eggs and add carrot spirals and Oh my goodness it was AMAZING! Next time around I'm going to make daikon (spelling?) noodles in place of the rice ones. Let u know how it turns out!

    Can u make vegan version of papaya salad? I just found out I'm allergic to shrimp and crab but my cravings for papaya salad is so strong....doesn't help that I'm pregnant too.

      Just leave it out. Adapt any recipe to the way it suits you. It’s easy to swap out ingredients or leave them out all together. I don’t like wine in cooking things such as stews etc. so I just leave it out

    Added cilantro leaves and some nems sauce before serving to "umamize" the dish a little further, yum, delicious, I can't get enough rice noodles !

    Hi Pai, I am a bit confused, the pad Thai noodle I have, the direction says to be cooked in boiling water for 8 minutes, but yours just soaked in water for 1- 1.5 hours and will be ready to cook. which one is the "more Thai authentic way" ? Thanks and appreciate it.

    substituting fermented soybean for fish sauce...putting the brown sugar directly into the shallots rather than the sauce...you are a genius!

    If one where to use miso paste, would you recommend dark or light miso paste? The dark miso is saltier.

    Thanks for sharing this lovely recipe, I made this today, and it is kind of too much sour, I used 1 tbs red miso and 2 tbs tamarind, I am not sure if I need just use 1 tbs tamarind to adjust the flavour balance.

    I am really enjoying the dish that you just prepare the vegan way of doing that I would have to travel over 100 miles just to get to a store that would do that I'm looking for Oriental or Thai markets in my area for the noodles the only thing that I found that was available was a paleo friendly noodle they are really good I'm still looking for the noodles as used in your recipe I would add in bok choy a few of the leaves cut to bite size I think that would be good you can add this in or take it out and then put in some other vegetables I'm enjoying the original recipe that you feared I'm planning on going to the market and soon as I can to find the ingredients
