How to Set Up a Weber Smokey Joe as a Smoker

  • Let’s set up this little grill as a smoker. I have few smokers and grills, but I wanted to show you that you don’t need fancy grills and tools to get decent results. If you are thinking about getting into smoking meat, this would be a very affordable way to get started.
    First find a used Weber Smokey Joe online or on my gear page.
    Wrap two thirds of the charcoal grate in two layers of foil to help target the airflow towards the coals.
    Place a wire mesh on the other side if you are using lump charcoal.
    Separate the two zones with a piece of metal, I use the long end of a charcoal basket.
    Create a makeshift aluminum water pan and place it on the foil.
    Add charcoal and wood chips above the wire mesh.
    Light one of one end of the charcoal - I’m using a torch, but you can use lighter cubes or paper towels and alcohol.
    The coals will slowly burn to the other end during the cook.
    Insert your meat and probes.
    Put on your lid with your top and bottom vents wide open.
    When it is close to your target temp, close the top and bottom vents about half way to restrict airflow and stabilize the temp. You’ll have to adjust the vents throughout the cook, so keep a close eye on it. I usually leave the top vent alone and adjust the bottom vent in very small increments.
    If you find that your meat is drying out you can add water to your pan or spritz.
    One load of charcoal lasted about 4 hours, so you may have to refill it midway through the cook.

    This absolutely works, just be sure to use lump, hardwood charcoal. If you use standard bricketts, you'll get that off fla or of half burned, chemically bonded coal. Only after standard charcoal (Kingsford, etc.) gets fully ashed over is it ready to cook on. Hardwolump doesn't have that limitation.

    Careful! Don't use galvanized wire mesh, or galvanized anything for that matter. Food grade metals only! Kick ass idea put into action!

    I usually just put charcoal on one side and pay attention to the heat. About 10 charcoal will cook a baby back rib easy. I throw in a hand full of wood pellets every 30 min. It works as good as a smoker. Once the ribs pull back a quarter inch the meat is done. 2-3 hours tops.

    nice to meet you. I'm Japanese and I'm new to BBQ. The temperature inside the grill varies depending on where you measure it, and you don't know which temperature is correct. There is a thermometer on the lid, but the air holes are higher, so I don't know where to bake.

      Every grill has hot and cold spots, it's very useful once you get to know your grill because you can use the hot and cold spots for different things, like hotdogs, onions, peppers, or just keeping things warm on the colder parts while you cook the main dish on the hotter parts.
      You can buy a remote thermostat online and just experiment with different placements to find out where the hot and cold parts are. The thermometer on the lid will only give you an idea of the average temp in the grill, the temperature on the cooking grate will be different.
      You can adjust the cooking grate's height depending on your individual grill's make and personal preference. I like my cooking grate to be as high as I can hold my hand above the heat source (coal or gas) for 6 to 8 seconds, but you can raise or lower it depending on how fast and hot you want to cook. A higher grate will cook slower and more evenly from the outside to the center, while lower will give you more of a sear and will cook faster. Hope this helps.       Take a can or two of raw thick biscuits (american style, can supplement with any small bread dough) and toss them on your grill, all over with even spacing so air can circulate. As they bake you can see where the hot and cold spots are due to the uneven cooking of the bread.

    I enjoy smoked wings on my 300$ offset char broil smoker than my brothers 3500$ Yoder. Real wood and charcoal give much better flavor than pellets in my opinion.

      Sure but wouldn’t do much to add flavor. Add apple or pineapple juice when you wrap in foil.

      You’ll get some of them going at the start, but the idea is that they slowly burn throughout the cook, it’s called the minion method.

    Really need to wait for the charcoal to get fully lit before putting meat on. Your meat will have a nice chemical smoke taste if you don’t.

      Country style ribs. Or get a pork butt and cut into strips.

      You can wait, but it’s only a few mins. I like to minimize the number of times I open the lid for heat stability. When you open the lid it increases airflow which could introduce temp spike.

    So you have a expensive meat probe and a propane torch to light the charcoal, yet you want to use that little grill, really and this is impressive. Buy a decent large grill good god

    Four hours really? If you're cooking more than an hour, you'll have to refill that Charcoal at least 3 × 4 times to reach 4 hours. On one of these small grills. And that's only gonna cook 2 nice sized steaks at the most.

    Why do ppl complicate smoking what's with the water I use all wood oak and add Mesquite chunks or chips I don't divide although I do the coal similar and what's with the foil
