I prefer the snake method. With 5 layers of charcoal and a stick in the center, I can get about 6 hours of a very solid 300F.
My wife does not like pulled pork, but I did a beef pot roast. Using this method, it came out like a brisket. 5 1/2 hours. I have been meaning to do pork, but I have to plan out all the meat before starting.
I found your video to be very helpful! When do you know if it’s a good time to wrap the pork? How much longer should it stay on the grill?

6 years ago your How To Set Up A Charcoal Grill For Smoking video talked about using briquettes but you used lump charcoal, and the older video said 225-250 and you shot for closer to 300. You also just piled some lump charcoal in the grill instead of using a chimney.
I've got lump and Kingsford but I'm a total noob at my grill, which way should I go?
I mostly use lump charcoal but briquettes are easier to control temp with especially for folks new to charcoal. Your best outcome will be when you use lower temps around 225-250. You can cook higher as I did in this video but I was shooting for a shorter cook time that day. Though you’ll come out with a better finished product when you take your time! Hope this helps!

I do sometimes. I don’t think it makes a huge difference in the end but still worth doing if you have time. Especially on longer cooks!

I never take the crackle off on the shoulder,it's the best crackle there is!
