Glen, I worked at a pizza crust factory as a dough maker. Even when we were making 160 kg batches of dough we would feel them to see if they moved correctly. (if that makes sense) Also your tortilla hack is used to make frozen pizza crusts. We ran our platens at about 350 F/176 C for about 5 seconds but cooking wasn't part of the equation. Just forming the dough for freezing and then other plants put their ingredients on them. We served a number of chains and freezer section brands.
@@andrathiele2638 the press works fine for corn tortillas.in fact, the press was designed for corn tortillas. Many Hispanic people don't use the press for flour tortillas and only use it for the ones made from corn.
Glen: Real Talk Time. My family has a genetic factor that puts us at severe risk from lung infections. Although take out is an option for us, not everyone delivers, and not everything can be reheated to be made free of contagion and still be the same thing. My wife dreadfully misses being able to eat at our local Mexican Restaurants, mainly due to how they make their tortillas. I've tried....I end up with something that's more flat-bread like. I can never quite get it right. I really appreciate your efforts here, as I already have these tools at my disposal. This should cure that jones for her. Thanks!
6 cups flour 3 large serving spoons of shortening if your dough is to dry add more next time . i like the beef tallow Walmart kind pinch of salt or 2 , tip of a spoon of baking powder, baking soda 1 and ¾ cups of milk i mix the shortening until it's well incorporated squeeze the mixture over and over add warm milk a bit at a time and it should come together if you need more water add it in small amounts. Once it's a ball of dough i put mine in the microwave for 30 seconds i work the dough 30 more seconds microwave work the dough and let rest for at least 2 hours in a warm place i like his technic but i use a rolling pin and i make about 4 dozen tortillas from this amount his method is way faster. Keep trying and trust me your tortillas will be much better than any factory funny smelling flour tortillas they sell at the store.

Descended from one of the many Rodriguez girls, my grandmother made tortillas, my mom too. It was not our mainstay, that was pasta. However, I was REALLY taught how to make tortillas by two Mexican Father-in-Laws. Secret, warm water [you got that X] AND the information that the fat/oil should be less than you think. In fact, it only has one purpose, to grease your hands! Do not add salt, do not add any other additives. [Milk, if you are making for kids who won't drink their milk!] I love your show... how much? @Krazy Kanuck you are right But, you must not cook much or you would not need to store it so long. Try making corn bread and using bacon fat and buttermilk. A good pot of fresh cooked pinto beans goes right good with the cornbread. And the beans are just right to refry them the next day.

My fav tortilla recipe, 3C ap flour, 1.5 t salt, 1 t baking powder, 1/3 C oil, 1 C HOT water. I make the dough in my bread machine on the "Dough" cycle. Wonderful results!
thank you for this video that actually uses the press on heat. It is made of cast iron, after all, but many people fail to grasp the fact that you can cook with the press!!!!! Great vid, new subscriber.
I can't thank you enough for this haha. I already had the same press, but had just determined it was only good for corn tortillas after getting no where with flour on it. I had been handrolling flour tortillas, making terrible shapes, taking forever, and making a mess. This worked amazing!
Glen, love this technique! I too over fill my tacos, and found a method of holding my tacos to prevent all the goodies from oozing out. Take your little finger and fold the end up, holding your finger in place to reinforce and hold in the fillings, and what do you know, you can even put more goodies into your taco!!! Please give this a try! My way to pay you back for all your good tips and making my cooking ever more delish!!!!!
Glad to see your heated press cooked tasty tortillas. I've bad experience with electric tortilla press. Tortillas seemed to dry up. Not so much to become crispy, but instead tougher to chew/bite. Same kneeded flour when rolled out with pin and cooked on griddle, it's very different and more likeable for my personal preference. Don't know if it's just about moisture, or the pressure and heat combined have some effect as well.
2 years later and I'm finding this same issue with my hot tortilla press method. I can keep the tortillas very moist and pliable but they're sooooo chewy
Tortilla presses are also good for papusas, chapati, and basically anything you need near paper thin. So they aren't as single-use as the name would suggest.

Great video, I pretty much use this recipe and method exclusively for Taco night. Is there a way to get to burrito-levels of thinness from these things? I want to buy 12 or 14-inch press but I don't think the tortillas will be thin enough.
Glen, Head over to your local Indian market and grab an electric roti press. Both sides of the iron are heated like a waffle maker, but flat. Makes very good tortillas quickly. Pre-COVID, I bought two so I can bang out a few hundred quickly for big events at work or family events with my beer keg rotisserie (thanks to you for that!)

Back in the late 70s early 80s I took cooking lessons from a lady who was 4th generation American of Mexican descent. This was also the era in which lard was bad for health. She only used 1 tablespoon of lard for 12 tortillas however she used full amount of lard necessary for tamales. Since I am so close to the border I do not make tortillas very often since there are excellent sources for freshly made ones. The press is never used but are hand patted out. Really like that you used the food processor for mixing the dough. Will need to try that.

Hey Glen..A few years ago I lived in Socal and in Riverside there is a place called oho de agua (waterhole) and there I saw a lady (Grandmother) that brought out a large bowl of dough and by hand, she made the tortillas 1 by 1, about 50+ and all the same diameter. To me, this was the best tortilla I have ever had and my best friend from Mexico said this was the closest to being real from Mexico.
Two questions if you don't mind answering. What temperature should the press get up to without getting too hot, and did you grease the surfaces first with lard or is it not needed? Thanks in advance
@@TheHuesSciTech It means about in the "middle". It may depend on your stove. It could need a little more or less. After you cook the first one you will know by the color how to adjust the heat.
I did this and it works! I might be looking at different recipes as I felt my tortillas were a little greasy for my tastes, but otherwise, what a great idea!
Take Glen's recipe and try reducing the fat to 80g (lard or butter). I also don't use baking powder. I'm rolling out with a pin and making a big mess, good to know this method works. Time to order a cast iron press.
Not sure if it’s a problem in Canada, but in the US there’s a possibility of lead in hot tap water. Microwaving water is pretty easy. Stir to avoid hot spots and add water if it’s not at the right temperature. (I know there’s no microwave in the studio.) Great video though :)
Christ don't let it slip or they'll all want one, the town pump is bountiful but squeeze too hard and she'll run dryer than the better half after she figgers out who left greasy fingerprints all over the master bathroom
I finally got my tortilla press built, modified off of, and thanks to Chudds awesome video showing how he did his. Now it’s seasoned and ready to roll so I’m hunting for my initial tortilla recipe. Have you experimented any more with your recipe? I noticed at the end of this video you mentioned trying milk again. I searched your videos and never noticed a newer tortilla video than this one that is a year old now so thought I would check. Thanks for all your great content, I love all your cooking shows!
Great idea! Had never thought of putting the tortilla press on the electric cook top!! Wowza! My question is - on all these video's I watch, it seems imperative that the tortilla should puff up and will only do so by cooking on one side for about 40 seconds give or take, then flipping, then flipping back to the original side. THEN they puff - soooooo, I'm wondering about the texture of the finished product - AND I don't think you tore one apart so we could see inside it.......just wondering.
Love your shows. I can understand what you are doing here but noticed you did not put ball of dough in centre of plate instead to one side (well it looked like that) yet seemed to fill base perfectly. I have a aluminium press wonder if can be used same way?
I used your technique for keto tortillas (based on Diedre's Kitchen bread recipe minus the yeast). I actually gasped with glee when my first try didn't shrink to the size of a drink coaster. They cooked beautifully--thanks for a wonderful idea.
Hello there! I'm curious to know if the weight of the top plate allows for the tortilla to fluff up at all or not? I’ve got a similar press but it’s not cast iron, might me aluminum I’m not really sure??? It’s literally the same as what you have except shiny..... do you think I could do this with it?
One of my aunt gifted me a tortilla press it's not black but shiny metal. Do you think it would also work? She bought hers in California. Maybe if I grease it a little she tried making tortillas before and got frustrated because she didn't heat the tool just used it cold.

I am immensly grateful for finding this. I was so excited that I immediately ran to tell my husband. I just bought that same tortilla press so I don't think mine is seasoned to be nonstick but I'll keep working on it. This is just the coolest idea!!!
I saw a TikTok user who had another use for her cast iron tortilla press! She put plastic bags over each half, then pressed chicken tenders into thin fillets! Brilliant!
there is another TH-camr named Guga Foods and he made some fresh Tortillas but used butter instead of lard and they came out amazing you could also do a mixture of lard and butter to see how they come out

If you’re running out of bacon fat, you’re not eating enough bacon. Get with the program, Glen!

We call those Butertillas
Same goes for a pita. Stick it in the toaster and put some salted butter on it. My go-to midnight snack.

Here in México there are electric presses to make flour tortillas, you just plug it and use it. They are really cheap too, about $30 dlls.

Excellent tip/video. Have you tried the "tic toc" recipe where they use heavy cream in place of water? Intersting right?

Medium is about right for heat and no need to grease the press.

Love your shows. I can understand what you are doing here but noticed you did not put ball of dough in centre of plate instead to one side (well it looked like that) yet seemed to fill base perfectly. I have a aluminium press wonder if can be used same way?

I used your technique for keto tortillas (based on Diedre's Kitchen bread recipe minus the yeast). I actually gasped with glee when my first try didn't shrink to the size of a drink coaster. They cooked beautifully--thanks for a wonderful idea.

Hello there! I'm curious to know if the weight of the top plate allows for the tortilla to fluff up at all or not? I wanted to use this hack to make Indian roti and was wondering how I could fluff it up? Thanks for any info. This video has been a game changer for me. One of my aunt gifted me a tortilla press it's not black but shiny metal. Do you think it would also work? She bought hers in California. Maybe if I grease it a little she tried making tortillas before and got frustrated because she didn't heat the tool just used it cold.

I am immensly grateful for finding this. I was so excited that I immediately ran to tell my husband. I just bought that same tortilla press so I don't think mine is seasoned to be nonstick but I'll keep working on it. This is just the coolest idea!!!
I saw a TikTok user who had another use for her cast iron tortilla press! She put plastic bags over each half, then pressed chicken tenders into thin fillets! Brilliant!

there is another TH-camr named Guga Foods and he made some fresh Tortillas but used butter instead of lard and they came out amazing you could also do a mixture of lard and butter to see how they come out
