It's great to see the joy on your face as you are enjoying the Taiwan leg of your journey. For cold weather riding (I live in Saint Paul, MN USA) layers is the way to go...which you know. Here's my suggestion: thermal tights; wind/water proof shoe covers, wind/water proof jacket with hood; fleece vest; wind/water proof gloves. That should do it...you can alway grab a pair of waterproof pants for good measure. I'll ride in -10C with the gear above; below the vest I have 1-2 long sleeves on top of a short sleeve base layer. Key on all of this is windproof.
