Yea, it takes a few cooks to see what height you need to cook at. How hot the fire is and how high the flames are. One rule of thumb esp. with beef and pork is to let the flame kiss the bottom of the meat. I don't usually get that close. With chicken esp at the beginning of a nice fire you do need more space. As the fire diminishes, you let the grate down. I haven't had any issues with the grate sticking in the channel steel on mine. I'll give it a test and offset a pot and see. The chicken finally got there. When you lowered it, you may have gone a little too much. The chicken looked delicious. Billy's ribs looked very tender, and the sides looked delicious too. Haven't used mine in a good while. Time to break it out.
Not to bad for my first time using it.. I'll get the hang of it in know time.. I did 24 chicken legs on it yesterday and all was good.. Oh and I'm sure that the Gabby's is much better.. You get what you pay for but I'm satisfied with my Titan purchase.. Thanks for the tips..
I did my first cook today on a Only fire Santa Maria grill and it's so much fun and great flavor for the food! I use my hand if I can hold it over for more then 3 seconds them I lower it some more. 3 seconds seems to be the sweet spot for most things. I did bacon, smokies and burgers. Mine also comes with a rotisserie that has a motor and runs on 2 D batteries. Looking forward to trying that as well
I have a buddy who cooks exclusively on a Santa Maria grill and he's got it down pat. He can cook chicken, burgers, and a few tritips all at the same time and it all comes out great. It just takes a lot of trial and error getting to know what level the food needs to be at during different stages of the cook. His grill is about 3' wide and rectangular so he also has the ability to have a roaring fire on one side and a hot bed of coals on the other. Then when the roaring fire turns the logs into hot coals he shifts them over. It is more flexible I suppose for a live fire cook than the round kettle version. It looks like you had a lot of fun with the first go around, great job and thanks for sharing your experience. I may have to get one of these bad boys. They are currently back ordered, but for $100.00 it looks like to much fun to pass up on.
I absolutely love open fire grilling.. I've ever done 2 9lb pork buts that turned out amazing. For the price you can't go wrong. I also have 2 very large Santa Maria's on my mobile smoker that I use for catering and for family and friends. I agree that it's nice to be able to move the fire to control the heat but units like your friend and mine comes with a large price tag. Thanks for commenting..

Love your videos man. Your videos inspired me to take a crack at building a better functioning Santa Maria Weber attachment. Took a little over a day with some trial and error but I did it. Absolutely love cooking on this thing. Keep it up man.

Recent video I did, the chicken was done in about hour and a half. You can speed it up a bit by covering it towards the end. Especially with full chickens and ribs. I sometimes use my 18 jumbo joe lid and place it over the chicken. (Since the 22 lid won’t fit) GreAt video though! I enjoy your content!
May I suggest; when you Spatchcock your chicken, instead of cutting out the back, you cut through the breast separating the largest pieces of meat away from one another giving you a quicker, more even cook! Nice show!
Hello again.. I use it daily and I'm not having any issues at all. I do recommend not using large spots of wood in your kettle cause it will warp the coal grate. Not a big deal and all I do it flip it over every other cook. 2 years with the same set up and going strong. It's worth every penny and I promise I'm not sponsored or get paid to say this.

Be careful when you buy a reduced price grill from this company. They lie regarding the extent of damage. They say minor dents or scratches but nope it's MAJOR DAMAGE. More like mangled bent twisted & contorted ready for the garbage.

looks like a great feed there.. i am leaning more tot the gabby grill. that expanded metal on urs looks a little thin. hows it holding up so far?

Would you recommend applying a light layer of cookkng oil to the entire grill before first use?
Yes.. I washed mine first to get the manufactures oils off and applied cooking oil to it before the first cook..
