I’ve never seen plantain cooked that way. I’ve always seen it fried in slices Nigerian style, which is lovely, but I’m definitely going to try it boiled for ten minutes with a stew. Thanks for that. X

If you’re going to use fresh jackfruit use the green one and prepare it just the same. I honestly prefer using the canned one because the jackfruit scent is not as strong.
You’re welcome! Boil it just the same to get rid and of the jackfruit scent. Might have to change the water and boil again. In the past I’ve use the fresh one, never boil or any other treatment and I was left with that jackfruit scent which I never liked. The scent from the canned is less potent but I still boil it. I will definitely give the fresh jackfruit another try some day. So try that and let me know.

When ripe it’s very meaty, juicy and sweet with a distinct scent. The green one is meaty, less potent aroma and will take one any flavor or way of cooking.
You can add a little less than 1/2 tsp browning when you seasoned the jackfruit then proceed. Burning the sugar or using actual browning mostly gives it that brown stew look. You can even curry it instead.

Plaintain come cook many different way in the Caribbean and South America.

Yes 😩, it’s young so the seeds are soft/ not mature.
I'll have to give jackfruit in this format another try. I love it as a fruit but didn't like when it was cooked.
I like it cook and use it as a tuna alternative and chicken. But didn’t like it fried as a fried chicken alternative it was too mushy.
It look delicious but what it tastes like because I try the ripe jackfruit stew but I just didn’t like the sweet mix with the spice
I can relate, tried the fresh ripe one years ago and didn’t like it.
The green one is still 'meaty' not sweet so it’s easier to season.
Green one must be used.
