Not a very impressive dish, you got a beautiful dry aged sea bream yet they completely saturate the natural flavors by repeating ingredients, it doesn't seem very well thought off, they repeated the same ingredients in different applications which in turn doesn't really offer much contrast, also kinome leaves are pretty strong, a little goes a long way... This is overall pretty poor and coming out of a two star restaurant.. I hope some of their other dishes aren't so lackluster
This video is wrong in so many levels, poor fish fileting, torches a lean fish, he says a lot of japanese names of ingredients but he doesnt know how to use them ... This is embarasing for a 2 star restaurant

And whats wrong about give lean fish roasting flavors you freakin amateur? ur pathetic srsly. Its like yea that meat doesnt got fat, so i cant give it roasting flavour. jeez. and people wonder why humanity is degenerated.

I think it is over seasoned as well, too many things going on.
