    nice dish, simple but great.
    i do prefer some chicken stock for the sauce. maybe just blanch the jalapenos or cooking in a stock and putting it in the pacojet with reduced chicken stock and olive oil , some vinegar maybe some fermented citron.

      First of all it‘s a fish dish so why chicken stock? And then why in the pacojet? Thermomix works way better for blending
