How To Make Homemade Chocolate Bars

- In this tutorial I will demonstrate how to create stylish and uniquely coloured chocolate blocks and how to professionally wrap and seal them using you logo or occasion greeting. I will also teach you how to make a coconut and dark chocolate ganache filling which goes beautifully with the white chocolate exterior.

The colours I used in this video:
Americolour soft gel food colour in:
Fuchsia
Electric Green
(mix these into your chocolate with some flo-coat also by Americolour or alternatively, some coconut oil / copha)
Gold dust or luster dust of your choosing.
GANACHE RECIPE:
for the dark chocolate ganache, add half the weight of cream to the weight of your chocolate. To fill my moulds, it took about 120 grams of dark chocolate and 60 grams of heavy cream.
I added about 3 tablespoons of dessicated coconut, but you can add as much as you like to taste. I like mine extra coconuty, so I just let it go.
WHITE CHOCOLATE:
200 grams white chocolate
3 - 4 tablespoons copha. add a little extra into the coloured chocolate f it starts to seize up.
(I separated 4 tablespoons into 2 small cups (2 tablespoons each and then added in a drop of copha).
For the label I measured out how large my chocolate block mould measured (it measured 14cm by 9cm by 2cm) and I inserted a box shape into a word document and custom measured it to be 12cm wide and 22cm in length (9+9+2+2+ extra to overlap for adhering the label)
Thanks guys for tuning in! Have fun with this one and experiment lots ;) there is so much you can do with these, ,not just filling wise but also with the colours you can use. You might decide to add silver leaf to the mould before you pour the chocolate for example. That would look awesome!

Such a gorgeous chocolate bar. I love the white with the pastel colors and a little metallic gold is always wonderful. The wrapping is a great tip- i haven't seen that demonstrated before so thank you.
+Danee Kaplan no worries, thanks for the comment :) It tasted pretty nice as well- although the dark chocolate bar on the outside tasted nicer than the white chocolate. Mixing the two might create a little something different again though ;)

I have Crisco vegetable shortening (which is somewhat hard to come by in Australia) and at room temperature it's like butter (i don't know if they make a rock solid vegetable shortening?). Copha is solid / hard at room temperature, so once the chocolate sets, i will set hard as well. Coconut oil is also solid at room temperature so if Crisco doesn't do the job then coconut oil will.

What was the clear liqiud that you added after coloring ganache? what is the necessity?
Hi +sura alasaad, this is copha or vegetable shortening. If you are adding in gel food colour into your chocolate then it is necessary as it will stop your chocolate from seizing up. Powder based colours won't seize your chocolate so you won't need to add copha then :) I have read that regular vegetable oil also seems to do the job though if copha / vegetable shortening isn't available. I have tried it once and it worked out.

Was the white chocolate tempered? I didn't see you temper the chocolate when you were coating the mold .

Hi hun, you would want to use oil based colours when it comes to chocolate. Water will cause the chocolate to seize.

Hi +Koda sliverBullets, I only sell cake toppers for the moment on e-bay and on my website. The tools in my video I usually find on ebay or at cake decorating supplier stores like Cake Deco in Melbourne.
Can I use canola oil instead of coconut oil?
yes that's fine :) just not too much I'd say. Coconut oil becomes hard in the fridge so it sets well with the chocolate. Adding in too much vegetable oil might have the opposite effect so just use less of it if you can.

+Silke Ireland I bought mine from a shop called Cake Deco in Melbourne. If my memory is accurate they cost about $8 Australian Dollars. So they are pretty inexpensive :)

I plan to put alcohol in the bars should i use alcohol instead of the heavy cream?
This should work, although the cream would still help keep the chocolate from seizing, in case the alcohol messes with it.
I remember you asking last time, That colour is pronounced F-U-SH-A (can always google pronunciation if that doesnt make sense haha). This looks great! Keen to try it :)
