    Ingredients:
    1tbsp oil
    2 red onions
    2 cloves of garlic
    half a thumb sized piece of ginger
    1 red chili
    1 aubergine
    approx. 600g of potatoes (with skin)
    pinch of salt
    1 teaspoon fennel seeds
    1 teaspoon ground coriander
    1 tsp ground cardamom
    1/2 tsp ground turmeric
    1 tsp ground cumin
    for the sauce:
    400ml veg stock
    1 can chopped tomatoes
    2 tbsp maple syrup
    1/2 tsp black pepper
    1 tsp salt
    juice of half a lime
    fresh coriander (chopped finely)
    flaked almonds

    That black pepper you added also increases the uptake of the turmeric’s nutrients by about 2000 percent!

    Top Tip: Pour in the chopped tomatoes, then pour some of the veg stock into the chopped tomatoes can before transferring it to the pan. This will help to clean out the can completely. :)

    I don't usually subscribe to stuff on youtube, but this is quite amazing.
    You have a good sense of how to make videos, your recipes are very interesting and you seem to have a fair amount of knowledge regarding the theoretical aspects of cooking.
    Most channels are just a series of badly cut videos about awkward people reading from some cookbook or their grandmother's recipes, so kudos for going the extra mile to rise above the sea of mediocrity. Besides, it's always nice to see people who genuinely enjoy food preparation, instead of viewing it as some kind of chore.
    As far as YT cooking channels go, I think I found my new favourite. Keep up the good work.

    This is delicious! I loved the spices! Mine came out perfectly! Will be making this again for sure. I'm actually glad I went with the combination of spices as opposed to just using curry powder. Gives it a whole different scope of flavours! Mmmmm! Thanks you two! 😁

    I made this for dinner with guests last night and it was really tasty, thank you. Fed 4 (with second helpings!) Only thing was my potatoes seemed to take much, much longer to softer than yours, but fortunately I made it in advance. I will certainly make it again!

    I made this for dinner last night, followed recipe exactly, but added a bit of curry powder at the end to bump up flavor. Wow wow wow. Loved it.

    This was lovely. I caramelised the onions longer (~10 minutes) and also added chili powder for a better kick :D I liked that particular spice mix, too.

    I consider myself an indifferent cook at best, and not a fan of eggplant/aubergine unless it's cooked well. I'd never have assumed I could do that, but after watching this I dared myself to give it a go, because it certainly looked delicious and sounded easy. Not only was this good, it's quite likely one of the best meals I've made for myself. After eating half of it and putting the other half in a container for lunch at work, I found myself scraping the pan to get every last taste of it.

    This was super tasty. Sweet. Aromatic. Just plain delicious. I would just change one thing: how they cook the spuds with the lid over - for us took half an hour. I will deffo boil them first next time. Recommended though, so many flavours - a different one with each spoonful.

    Very hearty and comforting, will deffo make this but probably will skip the aubergines and go for mushrooms. I have everything in except canned tomatoes and potatoes so super easy to buy and cook tomorrow night. Yum!

      We Indians, make this bangan aaloo ki sabji, without fancy spices. We put, basic spices like salt, red chillies, turmeric and at the end garam masala.

    Very nice. I tried as you suggested to use curry powder in the absence of all the spices you used. I did have some . I am always afraid of ruining a lovely dinner that I will have spent time to prep by putting spices into it that will ruin it. I used the curry powder & some of the spices that I had & it was very editable but not as good as I had hoped. . Where do you get the really gorgeous fresh herbs. I love Coriander & Dill & Parsley . I tried t9 grow them but to no avail. Where do you get the huge big bunches. Is there a veg supplier 5hat yo7 get them from.
    Now Zi must say I Love your Channel . I will be watching it pl. God from now on. I use beans Lintels & of course my favourite Chic Peas. Is there any other source of protein that I am missing out on.

    What would you recommend as a substitute for the Aubergine if someone can’t eat it? Think mushrooms would work? Or zucchini? Really want to try this!
