God today I prepared first time idly batter imagine....paranoid with mixer grinder always letting me down, I kept it in the freezer and finished, it was fun to check the uradh dal batter too...so happy I learnt to make idlis
Very good explanation. Udad daal should have enough air incorporated. Test is to put a drop of dough in plain water and it should float. I guess if use mixer to grind the daal, it does not do this as good. So investment in stone grinder is worth it.

the volume of urad increases by 2 .5 x when grounded on stone, when pulvarised it is merely 1.5 x.... you made a good point Haris....
