Simplicity with a beautiful way of out putting stunning dishes.

This is really fascinating. Marco Pierre White, who's probably my favourite chef... (but the more I see and read from Achatz the more he's becoming the most interesting and pioneering chef for me) said that simplicity is the secret to everything. And this diagram, this way of constructing a dish and allowing spontaneous ideas to interplay, is very simple but perfect. I'm only a humble cook... but I'm going to use this tehcnique to come up with something new. Cheers Grant Achatz and Alinea! :)

THANK YOU, THANK YOU, THANK YOU !!! I have been trying to figure an easier way to create recipes, but I was having trouble finding a good way to determine the components of the recipe. You couldn't have made it clearer or easier ! Again, THANK YOU !!!! ( And yes, everything DOES go with bacon.!!! LOL)

That’s so nice. I just got the flavor bible. I understand how to bounce flavors now but how I choose which ingredient becomes a puree or a Gelee or which one stays pure and whole? Is the star of the dish the Ingredient that we don’t touch too much ? I would appreciate any kind of help :) thanks a lot!

I think this is an incredible way to develop the creative process as we play with the flavors we already got in our memory and trying to assemble them in a new dish.

this is the fanciest pork N beans recipe I've ever seen! I have to agree that everything goes with bacon. Kudos to the camera dude for finally turning the camera in the end

I'm only 15, but from what I've observed over the years, beer also goes with everything

likemice you're correct but he specified Guinness at the end.. Which i promise doesn't go with everything.

@AlineaRestaurant This response with the corresponding thumbs-up is absurd, yet appropriate, and perfect.

That's too complicated for me so I'll just go to an all you can eat restaurant where everything goes with everything.

+hpnc This is for people who likes to create stuff. This is the engineering of things my friends. Go eat! Go!
