    ken, it's not ground beef. it's steak sliced super super thin. most places chop up the slices with their spatulas. tony luke's keeps the slices intact. but no ground beef is involved.

    Provolone was the original type of cheese that was used when cocky Joe Lorenzo, an employee of Pat's Steaks (the founder of the cheesesteak in 1930) one night was drunk and decided to put provalone cheese on his steak sammich, and the cheesesteak was born. Cheese Wiz wasn't invented until 1957, and Pat Olivieri decided to use cheese whiz because it was cheap and tasty.

    As a lifelong Philly resident I’ve had food from all of those places and they’re all for tourists and overpriced. They’re good and I’ve never had a bad experience with any of them but I’ve also had great cheesesteaks from corner Papi stores that were half the price. You can get a good cheesesteak almost anywhere in the city.

      @@boxcomix1 Gooey Louies, is good, but he's right, as well. Pat's, Geno's, etc, are all for the tourists. Wherever you are in the city, best believe you'll be able to find a great steak. There used to be a Korean owned corner store, on 50th and Westminster, that made GREAT steaks. Imagine that.

      Finally someone besides myself who knows this! Every youtube video about cheese steaks always sends people to these same old joints. Now I know it's "safer"to go to these places for the most part because they are "touristy" and you don't want to get lost in the city if you're really not familiar, but like Willie said, you can grab a great sandwich just about everywhere in the city (especially in the neighborhoods because many will make to order - and not just meat, cheese, onions and a roll - you can put almost anything on a cheese steak - and these video people really miss out on how awesome and creatively good cheese steaks can be by just getting the usual). Also, the prices differ according to neighborhood (some charge higher because the building's rent or lease is higher - don't let anyone tell you that their prices are higher due to the main ingredients...and if that's true then tell them to PROVE IT TO YOU...otherwise you're just paying for the "rent"). In the end, no one who lives in the city (particularly those born & raised) or really knows anything about anything, is getting dressed to drive to any of those places to stand in line & pay $10 -$12 for a sandwich with limited choices!If it's near you that's one thing, but MOST people will just as soon walk to the nearest corner store, deli or whatever and get a sandwich (and they're just as good if not better).

    I’ve been making cheesesteak concoctions at home for years and after sampling all types of different toppings, I firmly stand by shaved ribeye, topped with only grilled onions and SMOKED provolone cheese. It seems like using the cheese whiz sauce or adding mushrooms or peppers, takes away from the flavor of high quality meat and cheese. Keep it simple and it always tastes better 👍

      you know your shit. I'm the resident cheesesteak guy in my house and for me it's similar except I use onions and bell peppers, sharp provolone, thin-sliced prime ribeye, and mayo on semolina bread. Simplicity is for sure the key. Gotta be able to enjoy the meat, cheese, and bread combo. Nothing to overpower the cheesesteak essence!

      Sorry, but I like my steak & cheese with the works, which include ribeye steak, melted provolone cheese, grilled onions & green bell-peppers, sautéed mushrooms, lettuce, tomatoes, mayo, and a little bit of hot cherry peppers. But I would definitely be willing to try yours!

    Also great cheesesteaks are from Mommas, Gooey Louis, Max’s, Explorers Den, Reading Terminal, Paganos, Fat Larry’s, and other local neighborhood places.
    Mommas is by far my personal favorite, Gooey’s is great.
    It all depends on what mood you are in and where you are in the city, and what time of day.
    Delosandros also is great.
    Since I grew up in on Philly, I literally have eaten 1,000’s of cheesesteaks over the years and I’m fortunate to be alive from all of the saturated fat.
    Growing up in Philly, me and my boys always used American cheese or American/cheese wiz depending on where you were. Mayonnaise was a must, as well as fried onions, and ketchup. Our crew never as kids put hot peppers on our steaks, never, yuk!
    That is maybe a culture and age thing regarding hot peppers, yuk!
    Philly cheesesteaks are by far my absolute favorite food in the world, and the Explorers Den, where Lasalle people know about in the 70’s was the bomb.
    On weekends, especially Saturday nights, you would literally be waiting outside at night in a long, long line down the street. I would either buy two, or get a double meat, cheesesteak, as they were my absolute favorite growing up.
    Yes dear readers, enjoy your cheesesteaks now, but eventually, please leave them alone because they will lead to an early death, especially the way I loved them, they gave way too much saturated fat. It’s not worth the price you pay health wise that is, but because I regularly loved eating them, and I truly absolutely love them.
    But reality sets in as we age and mature, in that we cannot afford to eat like that unless it’s an occasional treat…
    So enjoy your visit to Philly, and get a steak and one to go, but watch your back, the big cities now a days are very very dangerous.
    Much love to my hometown of Germantown in Philly in my hometown city of Philadelphia, I so miss Philly as I now live in Florida. In the 70’s-80’s Philly was a great place to grow up in, the music, the food, the fun, the good parts were great, but the bad parts are a heart break, a real nightmare, but it’s my home and I love and miss Philly, but I’m safer in Florida at this point.
    But I love cheesesteaks❤️❤️❤️!!!

      nice post. Being that you're heath conscious I do hope you abstain from soft drinks and strongly recommend others do the same, otherwise abstaining from saturated fats alone would make little sense

      I agree, I can't stand the taste. It's just nasty. The only cheese I like is white american, thats stuff is amazing. When I make them at home, white american is my go to. That cheese is wonderful, without that nasty, fake, plastic wiz taste.

    Provolone is the way to go on cheesesteaks. One thing also is that there are tons of mom & pop stores that make outstanding cheesesteaks. my all time favorite is in the suburb of Brookhaven. Everyone has their favorite little place

    I am a Philly Cheese Steak NUT! I used to go around looking for the best one, especially when I was living in Charleston, WV. I went to this pizza place where they had a neon sign in the window that said "Philly Cheese Steak". So I went in and told them I was looking for the best PCS in Charleston. To my surprise the girl behind the counter said, "You won't find it here." I was stunned but ordered it anyway and she was right. The cook came out when he learned of my objective and told me that the best PCS in Charleston was at the Women's and Children's Hospital. SO, I went over there one day and they had a decent PCS sandwich. Over the years I decided to try and make one myself and after trial and error I finally produced a PCS sandwich that 'took me to Philly'. I will continue to seek out the best anytime I travel and PCS sammies are on the menu, but I am so happy I know I can produce one that fits the bill.

    Nice little video! Ok, you asked, so, here you go. First of all, it is a cheesesteak - period. Do they call french fries, french fries in France - NO (they call them frites - not french frites)! Second of all, it is chopped rib eye - period. Thirdly, the cheese is provolone, but you should always get “extra” provolone. When made properly, the meat is cooked on the grill with the provolone, so it all melts together. Fourth is the bread - Amoroso’s rolls - period. Fifth is the toppings - always get the peppers and onions on the side. Most places do not spread them out properly, so you get a bite with too much, then a bite with none. My favorite cheesesteak is across the river in Maple Shade, NJ - Yellow Submarine - which was featured in “The Best Thing I Ever Ate” HGTV episode, and was presented by Aaron McCargo (the fourth season winner of “The Next Food Network Star”), a native South Jerseyan, and professional Chef, who has spent a great deal of time in Philadelphia - I think he knows what he is talkin’ about. Next time you come to Philly, bring along a local with you to explain a few things. For instance, a lot of people like to use ketchup on their cheesesteaks, and others think it is sacrilege. You should have tried a single bite of each with a little ketchup to decide for yourself. Thanks for not doing the Pat’s/Geno thing - as so many have said - tourist traps - but also, the employees there seem to go out of their way to be rude, which does not enhance the image of our beloved city (Geno’s actually put up a sign about 15 years ago that stated that customers had to order in English - THIS, in a neighborhood built by immigrants (nerve, gall, Chutzpah, audacity).     Always go with root or birch beer, cheese(always go with both), I prefer chopped finely and larger onions, and lastly add sweet peppers it will increase the flavor profile of the sandwich

    This guy is cool and down to earth....he's genuinely learning about cheese steaks on the fly, no knock on him! Obviously there is no "ground beef" in these steaks, but again, he is just learning. I prefer white American on my cheese steaks and I like the meat finely chopped with the cheese blended in. Toss up between Jim's and Dalessandro's. I gotta try a roast pork sandwich at John's Roast Pork, I hear they are better than any cheese steak out there.

    1st discover Ken thru this video back in the Summer of 2020. I was doing research for Philly Cheese Steaks places to eat at. I can't wait till the world is normal again and we can all travel and relax when in different cities. I want to go to Philly and check these places for a sandwich.     I wasn't sure what "long hots" (peppers) were, so I had to research. I'm pretty sure this must be an east-coast thing, where there are lots of Italians. We don't have them out West. Does this sound right?:

    Pat’s and Geno’s are both definitely tourist’s traps! I’ve never had anything from DaLessandros but ive heard they are the bomb. Tony Luke’s and Jim’s are both great. Next time you go to Philly also check out John’s in South Philly.
    I may go to cheese for a cheesesteak is either American, Provolone or Cooper Sharp. I have to have fried onions and mayo on my steak. Sometimes I like to have mushrooms in my cheesesteak too. Ketchup is also an option depending in my mood.

    Cheesesteaks are typically chopped. I like mine with onions, sharp provolone and hot peppers. If I'm in the mood....sauce of the side. And also I like to have mine with birch beer. Yummy

    Both Geno's and Pats serve a great sandwich. It's a "local" thing to say they're not good because tourists go there. They use the same meat, cheese, and rolls as everyone else. They just happen to be older than most and got the notoriety sooner. For 30 years people have been saying to avoid them, well they're still open despite everyone know they're "just tourist traps". That said, Steve's Prince of Steaks, Jim's, and Dalessandro's are my top 3 in that order.

Everyone knows where the bread comes from(90 percent of steak shops in the city use the same place). The cheese is clearly not a secret. It comes down to prep and handling, that's why they're never in a reasonable top 10 but the food isn't anywhere near as bad as people make it out to be. I have no need to go there, there's many places I prefer closer to me, but I'm not gonna be sad if you give me a sandwich from either place.

    Thank you for your video. It makes me so homesick for Philly as I am stuck in Florida which is so boring. Philly is crowded, dirty, more dangerous, louder, angrier, but it’s home to the best food in the world. Home of the Philly cheesesteak.
    I grew up in Philly, and you must try also Gooey Louey’s in south Philadelphia as well.
    My favorite steak is from Mommas on Belmont Avenue in Bryn Mawr.
    40 years ago I would go to Explorer’sDen, and Pagonos.
    Explorers Den is my favorite, there would be a line down the street well after midnight in Germantown, but that was then.
    We always had our steaks with American cheese, or provolone now, but American made it trust me. Cheese Wiz is cool but American cheese is what we from Philly would get. I know, I ate 1.000’s and thousands of steaks in my life. I’m fortunate to be alive!!!
    I love Philly, and I love my childhood in Philly, eating two cheesteaks at a time, one walking home from explorers den, and forced to share the other one with family. They were sooo good back then.
    Philly is a great place to live if you find the right neighborhood!!!
    The best because of the food.
    I truly regret leaving my home city iof Philly, but I had to keep the wife happy.
    Pray for me, and get a cheese steak.

    I've lived in Philly my whole life...never did hot peppers....but after watching you try it, I think I will as well.
    Normally I always get provolone ANDDD American cheese lol.
    I always get fried onions....along woth mayo black pepper and ketchup...sometimes sauteed mushrooms, but as I read another comment...you cant go wrong with toppings...as long as youve got your favorite cheese. I would indeed drink a pepsi ONLY with my cheesesteak lol or water.
    So your question about why was Jim's ground up and Tony's sliced. Many places do their steaks steaks differently. Some places will take the slices of steak and chop them up SUPER fine...but yet still chunky, and others will keep the sliced.
    (You can also order chicken cheesesteaks which are just as good)
    Thanks for coming into our town and reviewing three great known places!! Watching this video has put me in a cheesesteak mood...I'll be getting on for lunch tomorrow lol.

      hay woods I’m from Detroit when I first started visiting phlily I’ve personally been corrected by Philadelphians in Philadelphia for this....so no I’m not all wrong, and majority of Philadelphians I know don’t even do wiz, wiz is typically done @ the touristy joints

    Broooo your killing me with this “ground beef” comment, its shaved steak just like tony lukes but chopped up. Ground beef in a hotdog is a called a “looseburger” in detroit. “Ground beef” smh (slaps self in face). But i cant hate you did ask about it sooo, its chopped steak my guy.

      @Fabian Albiar It's not ground in the sense of hamburger, though. Usually they'll put a big pile of the thinly shaved steak on the grill to cook in bulk. Then they chop at it with that spatula thing to speed the process up and have it cook more evenly. It ends up in tiny pieces but not like "ground."

    the answer to your question at 12:58 is technically provolone. The original sandwich didn't have cheese, and it was an employee of Pat's, Joe Lorenza, who first added provolone to the sandwich

    Next time you go to Tony Luke's you have to get the roast pork sandwich. He more known for his pork. Almost no one that's lives there gets cheez-wiz it's almost always Provolone or American

    Glad you had a good time. I’ve been to Jim’s about 6 times, Tony Luke’s about 3 times, and Dalessandros twice, living life in the Philly suburbs for the past 5 years. I would say the workers at Jim’s are the hardest working bunch of guys and gals. You should see the number of sandwiches they crank out there on the weekends. Cheese Whiz is a must try especially for beginners but regulars eat provolone or Swiss. The meat at all 3 is actually thinly sliced ribeye steaks, some leave it in slices and some cross chop it into little bits. The seasoning makes a big difference. Some use flavored oils, others shake spices as the meat cooks. Always satisfying! Worth every penny. You were really criss crossing all over Philly if you went in that order: Jim’s, Art Museum, Tony Luke’s, Liberty Bell, then Dalessandros. You got lucky with the parking during Thanksgiving week. When we drive downtown on the weekends we have to drive around looking for a parking garage that isn’t full with tourists. 🤣

    Honestly you can get really great cheese steaks in NYC & for WAY cheaper too. You can get a whole meal & then some for what you pay in philly for only 1 sandwich. Wawa is pretty good & a lot cheaper also.

    I know I'm commenting late, but hats off to you for trying three great cheesesteaks with some variety between them. The 'sauce' they gave you at Dalessandro's is very much traditional in the Lehigh Valley (Allentown, Bethlehem, and Easton), about 60 miles north of Philadelphia.
    Next time you get to Philly, I urge you to try a roast pork sandwich, best served with sharp provolone and broccoli rabe or spinach, but you do you. Four great places: John's Roast Pork, DiNic's, Tony Luke's and Cosmi's. I love a cheesesteak, but I think I like the roast pork sandwich even better. All the best to you!

    Jim’s for steaks hands down, Tony Lukes for the roasted pork. Make sure you get the pickles on the condiments station by the kitchen.
