I think 4911 is a much better pick than 91011. Your main objective is to keep your opponent from breaking through to the very strong top right side of the board. If you do that, you most likely win. By choosing 91011 you give him two paths towards that area: through 4510 and through 4911. By choosing 4911 yourself, you deny him that option. This basically means that if your just roll a 9 before he rolls a 3, you stop him from getting there. By choosing 91011 you have to roll two 9s before he rolls a 3.
Deceptively I think the first pick is actually the 3 10 8 as it's the strongest sheep and pairs well with whatever's left. The 9 10 5, 6 11 5 and 3 6 9 are all strong options to go with that spot.

None at all. There is nothing you could pick that would NOT be annoying when it's on repeat for 10 - 15 minutes.
