Theres no reason to cut off everything behind the rib cage especially on bigger perch. Your filleting them like walleye anyway so save the belly meat. I get its cold and you want to do it fast but do the animal a service and atleast take everything you can if you're going to kill something for food.

It’s actually very little meat loss since you angle down behind the ribs. If I really owed anything to the fish I probably wouldn’t have killed it.
