- Another day in the life of a pizza truck owner. This time we are smashing out a lovely local wedding pizza evening buffet for 80 people. Come along with me as I set up and Ben and I get the job done.

My brother got married 2 years ago and he and his wife had their wedding catered by a father and son team with a brick oven pizza truck. They were amazing and it was some of the best pizza I've ever had. Everybody loved it. Cheers and well done Adam and Ben.
Love the Cleanliness brother. It's so rare these days to see someone with proper hygiene
Here we go nothing wrong with a few germs get out of your bubble
Not to be the party pooper, but look at 33:08 :P
Late night wedding reception pizza is genius.
I just found you on u. Tube and have binge watched all your videos . I enjoyed all of them. You are amazing your van is well organized clean and efficient. Well done. I wish you continued success ❤❤❤❤❤
Awesome! Thank you!
Very enjoyable to watch. Thanks.
Glad you enjoyed it
Brilliant video. Love your setup and efficiency in pizza making.
stumbled upon this channel by accident and instantly subscribed. with my ADHD, it is a miracle to watch videos this long in this format but there is something about this channel that allows the noises in my brain to ease out. It's probably your voice? or how clean you work? or how you make sure everything is clean? or just the calmness of it? I am not really sure but thank you. Been binge watching for about 2 days now.
Just ordered 2 Arc XL's for my trailer. Cant wait
Oh sh*t, an arm of my lego man 😂😂😂 This made me burst out laughing 🤣🤣
Great Video as always!
Smooth operation! Wish I was at that wedding reception for some of your pizza🎊🍾🥂🍕
I've learned loads from you man. I do feel bad for wondering about the wood in the early days but I've heard you explain a few times now and makes total sense. Thanks for all you do and your content!
Another great video. You make it look so simple and easy. I know the prep work makes lighter work but keep up with the great videos and post more more more. Would definitely love to try your pizzas but I'm from the midlands area.👌🏻
Hey. Thank you.
Love watching your videos. Just waiting for my dome to be delivered. You make great pizza 👍🏼
I love your van I used to help be a milkman in my youth and we drove a van like it not exactly like it but very close their so cool. I hope you keep the van forever man because their actually well sort after among collectors it's a hard van to come by these days
Yeah it awesome and wasn’t cheap.
Smashed out another one Adam!
Always learning with you, congratutalions
Got a Gozney because of you,big inspiration man been using your dough recipe also. The temp of dough really makes a difference
Loving the content Adam
love the setup vids, quality gear
Good little setup ya got there mate..that's up there with the best jobs out there l reckon, l made pizza for years here and there down here south of Melbourne Australia, near Bells Beach. You should put "The Aussie" pizza on your menu. -Tomato base/cheese/shredded ham/bacon slices/egg spread over top & small sprinkle of cheese(to hold it better)..salami & anchovies are good extra's..try it out yaself, you'll enjoy it.
I love this!🍕🍕🍕
Best pizza guy in the world give ⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️ stair top chef ok
Live in Ireland
Awesome pizza party!
Keep up the good work mate
Getting my Gozney the weekend man! Keep up the inspiration!
Have fun!
Lamb and caramelised onions with your rosemary scattering of feta. 💥
That’s the shizzle!
Thanks!

Segway into next thought...."rouwt" 😂 gotta love the British accents
Haha, " I'm going to drive with the door open today, coz it's hot , it's about 22º ". Here, it's the middle of winter in Brisbane Australia and it's also a Chilly 22º
Vans gonna hit 55+c tomorrow 🥲
Love your videos, you inspired me to buy my own Roccbox. Can't yet fully commit to the Arc!! I want to come by your market stall as I'm only in Milton Keynes but don't want to go and find you're not there. Do you have a rough schedule for when you'll be there? Thanks!
Every Wednesday at the moment.
Could You make a video of making the garlic oil and also the pesto Your way? :) I loved the idea how You prepped the mozzarella. Today I did prep for my tomorrows cook and it was soooo easy to make the mozzarella cubes.
Not sure if you have ever made a video on it but, it would be cool to see like your prep to pack the truck for an event like this.
Sounds good! It’s on the list
Great job as always! I wanted to ask you I had my new dome delivered today and it’s amazing. But the puck doesn’t fit flush to the stone top? I was wondering if you knew if that’s normal?
Thanks in advance
Gianni
It may settle when heated up. It should be flush though so email Gozney if it’s an issue.
It's funny, before opening TH-cam I was wondering if you could do a chicken bake in those ovens and wanted to ask you if the heat would be too high to do it in the oven setup for Pizzas, and here you are the first suggestion when I open it. Basically you probably have most of the ingredients in a pizza truck except the ranch dressing. Basically take a pizza dough, roll it out, top it with pre-cooked chicken, cooked bacon, ranch dressing, mix of cheese (provolone, mozzarella and parmesan) wrap it up into a roll, top it with a bit more cheese and then bake it. Would the internal cheese melt before the outside burnt? Big concern would be if you can do it without adjusting oven temps?
Got a question 🙋♂️ what is on the garlic pizza? It looks so good.
hey, love the videos man! awesome work. me and my partner are looking to get married next year and would love to get an idea at how much it costs for your private events/ an evening set up like this?
thanks,
jack
forgot to mention.......obviously depends on amount of people but looking around 60 people + handful of hungry kids.
@@jackcambridge he answered that in another comment in case you didnt see "I have a minimum of £1000 for up to 100 guests. Same price applies if it’s just 10 people."
Great video thanks!! Where do you get the serving boards?? Thanks Adam as always learn so much!
They are the Gozney ones. Pricey but decent
@@peddlingpizza will
Have a look thanks! Need something similar for pizza parties - will check how much 💸💸💸
22 degrees? Man im trying my best to watch your videos here in 38 degrees :D
You should come to germany again and serve some pizza at our reopening event for our school! 🎉😂 We really want to try your craft! 🫶🏻
Bit too far for me sorry.
Nice. Have a QQ, given the shorter fermentation v's your normal dough recipe, did you omit the Uniqua stronger flour and up the yeast at all? Love these vids, super informative!
Nah I still rocked the Uniqua in this mix. Fermentation time was pretty much the same. About 24 hours ish.
@@peddlingpizza Thanks Adam.
Where did did you get this Table??? 😮
as a home jobber, How long do you recon i can keep the dough balls fresh in my own fridge before use? id love to give it a try but prefer to make multiple if om going to. Thanks :)
All depends on the process and flour used.
How do you price it for a wedding or event that includes a set amount of pizzas? Cheers
Just found you, very impressive.
I will soon have 2 Arc XL's in my brand new trailer. Am I able to just use a hose from Gas cylinder to Arcs? Or will proper installation/pipework be required?
Best off speaking with your catering lpg engineer on that one. Be guided by them. Mine was installed and signed off professionally.
What is the table you use for your main buffet?
Surf n turf 1.5m one
How much does Ben get for the night? and i'm still waiting for the 7 in 11 video to come out.
I pay £15 per hour but a minimum of 5 hours even if it’s less.
I find all of this fascinating. How do you price an event for up to 100 people? As if they will each eat 1 pie?
After doing this for over 7 years it’s become pretty clear that most people eat on average half a pizza at events like this. It does depend on the event and timing though. For wedding evening food then generally half a pizza per person. So for an event with up to 100 guests I’ll usually bring 55-60 dough balls. Generally they will eat about 40-45 and I’ll bake and box off the rest for them. I always leave them with extra pizza for later in the night. I charge £1000 minimum for any weekend event up to 100 guests then £8 per head after that. So for up to 200 it would be just £1800. Buffet style is the way to go though.
Let’s go!!
Never been first to comment on a video!! Ever!!!! I’m glad it’s yours good sir. 😃
😀💪🏴🏴
Where did you get the storage cabinet?
It was custom built for the van
GOOD NIGHT
damn wish i was there i wouldn’t let u down every time u turn back i would have the hot plate an sleeve ready for u- Ben a lil off on his A game but kudos both Gent’s🔥🔥
Oh Ben smashed it out.
Germany - would have been nice to shake hands then!
Next time!
Could you do a shift on wood? It might be interesting to see how they differ from the gas.
That would be funny if the wedding party started yelling "Hot Pie".....
My ears still hurt from that
@@peddlingpizza lol
brilliant !
I saw your side kick wearing a sweatshirt with the logo of yours where could I order one?
Proper wedding needs a Pizza Truck, Taco Truck and....?
Yo Adam where are your serving boards from? Probs Gozney but they are mad expensive for me 😂
Yeah Gozney ones
Curious how many pizzas you smashed out in total for this event. Just amazing watching your work flow, nice and calm. Which comes down to good prep work.
Baked 54 in total I think. They had about 45 as we fed the bar staff and i took 3 home for family.
Which camera are you using?
For live my iPhone 14pro
For other stuff my DJI osmo pocket 3

What do you do with the dough If you have some leftovers? Can you Put them in the fridge for the next day? Or freeze it for when you need them privat?
Generally bake it all on site. I don’t have a fridge big enough for the dough and I never freeze it.
Oh okay good to know 👍🏼 so when you Said "i have Something left for the Kids tomorrow" you will bake the dough at the Party and tomorrow rebake it or you Take the dough Raw with you Back Home?
@@Oth3rRun bake the pizza and just reheat the whole pizza in home oven the next day. It reheats very very well. Just 3-4 mins in a hot oven. You can even freeze the whole pizza for another day.
Ah OK thank you very much 😊 Love youre Videos an i learned a lot from you 😇
Hello! How do you calculate what to get paid for a wedding pizza buffet for 80 people? Im just getting started myself. Your videos are very inspiring and helpful! Thank you so much
I have a minimum of £1000 for up to 100 guests. Same price applies if it’s just 10 people.
@@peddlingpizza Thank you. And that includes everything? Produce, driving and so forth?
Ever had the van not start before an event?
not on a private event. its very well maintained and serviced.
AND BUILT BY LEGENDS
Bye Ben
How much did they pay you for this Buffett ? Looks lovely
£1000
Huh. I've never considered rosemary nor lamb on pizza.
Garlic pizza at a wedding not sure that's a good idea. Unless everyone eats it. 🤣
It always goes down well
Hey dude, I’ve just started my own pizza buisness, very fresh, I have a gazebo setup, what is that folding table please? Or if anyone knows would be an amazing help thank you
Surf and turf table
@@peddlingpizza mega, thanks matey much appreciated 👊🏻
For us Americans that refuse to be like the rest of the world, that's 500 celsius?
Yeah
Love your videos. Thanks for avoiding the follow cam btw... makes me dizzy.
It’s good for certain situations.
You had me until you said rosemary……..urgggh
Ive got to admit it really winds me up when I see Vegan on a menu and not gluten free.... vegans a choice and not a dietary requirement and its not even hard to prep for gluten free. Its nothing like a nut allergy where someone could have a serious reaction. It would just be a case of having gluten free bases and seperate cutters thats all. People really do need to start accommodating for food like this and stop using excuses!
It’s really not that easy in the truck. There is flour everywhere. It also needs cooking at 100c lower temp so not possible in the middle of a service. Pizza is made of gluten and best eaten that way.
Thanks!
Hey. Thank you. 👊🏻
