Ingredients:
- 1 medium ridge gourd (torai), peeled and sliced into thin rounds
- 2 eggs, beaten
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- Salt, to taste
- 2 tablespoons oil
- Chopped cilantro, for garnish

1. Heat oil in a pan over medium heat.

3. Add ridge gourd slices and saute for 3-4 minutes.

6. Pour the beaten eggs into the other side of the pan and scramble them.
7. Mix the eggs with the ridge gourd mixture.
8. Cook for another 2-3 minutes, until the eggs are cooked through.
9. Garnish with cilantro and serve hot with rice or roti.
