    Ingredients:
    • For Paya:
    • Paya (cleaned and washed) - 8 pieces
    • Ginger garlic paste - 1 tsp
    • Turmeric powder - ½ tsp
    • Salt - 1½ tsp
    • Sliced onion - 1 medium
    • Coriander stems - a handful
    • Water - 1 cup
    • For Green Masala:
    • Mint leaves - ½ handful
    • Coriander leaves - 1 handful
    • Green chilies - 6-8
    • Poppy seeds (khus khus) - 1 tbsp
    • Spices:
    • Oil - 2 tbsp
    • Cinnamon stick - 2
    • Cloves - 2
    • Black cardamom - 1
    • Green cardamom - 2
    • Coriander powder - ½ tsp
    • Cumin powder - ½ tsp
    • Chili powder - ½ tsp
    • Turmeric powder - ¼ tsp
    • Salt to taste
    • Pepper powder - ½ tsp
    • Garam masala - ½ tsp
    Instructions:
    1. Pressure Cook Paya:
    Add paya, ginger garlic paste, turmeric powder, salt, sliced onion, and coriander stems to a pressure cooker. Add water, close the lid, and cook for 3 whistles on high flame. Lower the heat and cook for 30-35 minutes.
    2. Make Green Masala:
    Blend mint leaves, coriander leaves, green chilies, and poppy seeds into a fine paste.
    3. Cook the Masala:
    Heat oil in a pan and add cinnamon, cloves, black cardamom, and green cardamom. Add onions and sauté until golden brown. Add ginger garlic paste, coriander powder, cumin powder, chili powder, turmeric powder, and salt.
    4. Add Tomatoes and Green Masala:
    Mix in sliced tomatoes and cook until soft. Add the prepared green masala and cooked paya. Simmer for 12 minutes.
    5. Finish and Garnish:
    Add pepper powder and garam masala. Garnish with coriander leaves and serve.
