    I am slowly but surely going through all of your recipes. It was actually the first time I didn't mess up a baked good, so proud! Oh my god, these homemade donuts were a huge hit with everyone! The ground golden flax was completely undetectable! The taste, texture, PERFECTION! It helped encourage my circle to go out and try more vegan foods. Thank you for helping me spread the vegan message

    I made cinnamon rolls last week and that was my first time using yeast in baking. I think this is the perfect recipe to follow up with that. I'm going to try using unrefined coconut oil and making coconut donuts, since those are my favorite. I might also try making a maple glaze since that's my second favorite. :)

    I just finished making them! They are so good, I coated mine in cinnamon sugar and they taste just like Tiny Toms!

    like the idea to bake option also . if brush withooil will still get a crispy and similar finish yet won't be ladened with it.

    Mary, it'd be so cool if you could recreate a vegan version of chinese bakery style birthday cakes! (I think they're sponge cakes with cream between the layers) My parents love those and I want to be able to make a vegan version of those!

    Thanks for sharing your recipes. I’m going to use dates, because that’s the only sweetener I can use besides strait fruits. I use apple sauce to bloom the yeast.

    Mary I made these years ago and LOVED them. Could I form the donuts the night before I want to bake them, refrigerate, then pull them out for the second proof the next day?

      In many bread recipes, you can do this. The issue is the variable proof time on the second day. I haven't tested it so I can't advise. Please let me know if you end up trying it anyway :-)

    You are a wizard, Mary. Love this! Definitely gonna try it out. As a vegan, I've definitely missed donuts but I hate driving 30 minutes to whole foods to pay for overpriced vegan donuts. If I make this, I'll probably only eat donuts for days 😭

    Mary! When I rolled out my dough and attempted to cut out the donut shapes it sprung back and did not hold form. Do you know what I did wrong please and thank you :)

      Dont knead the dough after the first rise. Just squish it down so you eliminate any large bubbles in the dough. Roll and cut. It shouldn't spring back.

    hiya! so you're super helpful and I'm still new to this.. do you know what to do about missing cottage cheese? I love cottage cheese, I'd eat it straight up, and I haven't found something that will mimick the texture or I guess the tanginess.. might be quite a challenge :)

      Wow I've never tried with that kind of flour! Sounds healthy!
      Keep in mind, whole wheat flour tends to absorb more water than regular AP flour so you might not need as much. Good luck! :-)

      Turkey Red is an heirloom wheat, one of the first kinds of wheat to come to America. My brother raises it, so it is all we use. I ended up having to use 1/4-1/2 cup more flour because it has a low gluten content. If you would ever like to try the wheat let me know, I can get you some flour or wheat berries. :)
      I loved this recipe they worked out so well, best donuts ever!

    Does the type of oil matter? Can I use avocado oil instead of coconut? Or is there something special about coconut oil?

      +Johnny Li I haven't tested with avocado oil so I can't say. I've tested with canola and coconut (both refined and unrefined) and it turns out better with coconut. With canola it was edible but I won't say mMmm sooo good ;-) Please let me know if you try with avocado.

      Johnny Li i think it will make a difference in the texture because coconut oil gets hard at room temperature. Makes them a bit crispier :) if you use liquidy-er oil it might turn out smoother if you know what I mean

      +Bb Bou this recipe has only been tested with flaxseed. However chia seeds are usually a good substitute for flax.

      It improves the texture of the donuts. It will be ok without, but it's much better with. BUT THERE ARE NO RULES. :-) Have fun with it!

      Anything with yeast requires something that’s _binding_ . As the yeast ferments it releases air which sits in the binded yet stretchy dough pockets which are formed by developing the gluten while kneading.

      It should be fine. You might find that your doughnuts coming out with a bit more color faster because of the additional sugars and protein.
