I had nearly this sauce in a mountain restaurant in Cyprus on pork. The only difference was they used oregano and Commandaria....sherry for the UK. Very very nice..

I'm afraid that all too soon we'll have to be reversing the chicken and the mushrooms in this dish - Mushroom "steaks" with chicken sauce! Hey! Lovely Rik, I would prefer chicken breasts, as the thighs have some bits in them that puts me off. There is hardly any food I don’t like, but some textures, and bits, that’s why I am funny about sausages, must be very finely ground for me.😊
I especially like your concept of a little bit of butter. And, thanks for the tip of sugar to help caramelize the onions.
